Notes: Brewed January 27, 2023 - Mashed at 152°F for one hour. Initial runnings at 12° Brix (1.048). Collected 5.75 gal before hitting 4° Brix. Collected wort landed at 11° Brix (1.044) Added 1.5 gal water to bring initial boil volume of 7.25 gal to SG of 1.035... confirmed Brix landed at 8.8. Boiled for 45 minutes adding hop charge at 40 minutes. Cooled into high 60°s and collected 6 gal of wort at 10° Brix (1.040). Ferment room temp 58°-60°F
Kegged Feb 10th - 1.016. Corrected yeast efficiency to reflect actual FG.
Questions - low yeast efficiency due to under pitch? Or should I beta rest in 140's for a bit to thin body?

Ok.. so we were the last ones to start, first ones to post our recipe. (Advantage: Webmaster) But seriously, all of the equiptment for our system showed up at 9 am. By 9:45 we'd cobbled together the CDJK mobile brewing system.
Mash water was acidified using lactic acid and quickly heated to ~160F. This was dumped into Kent's lauter tun. And all the grain was mixed in to a settle at a temp of about 148F.
Sparge water was then heated up and acidified. (In the process the poor cap of my ph meter was sacrificed to Kent's mad burner.)
Recirc was quick and painless. Sparge then occured over the next hour as we ran off into a grant and then pumped into the boil kettle with the Target hops already present.
As we gathered more liquid than we had space for, (Part of the plan) we began running the first runoff into the second kettle.
The boil proceeded fairly normally (w/ one near boilover thanks to Jim's burners massive BTU output)
5 Minutes from the end we added the brown sugar. This sugar had been sampled by a number of people that morning and was acclaimed as a great sugar for an English beer. (Available at this time at Trader Joe's )
We sanitized the chiller and pump while we figured how, since we'd boiled in 2 pots, to balance the batch. We ended up using the pump as a mixer between the two pots. Once done for a sufficent period, ~10 minutes.
Chilling accomplished, we then ran boiled water through the chiller to dilute our batches down. We moved indoors to oxygenate and pitch our yeasts. Thanks to the Rhudes for pitching in another tank of O2 when mine ran out. Jim Kopitzke pitched his batch with London III. Cullen pitched Thames Valley. Kent and I (Drew) pitched with the Whitbread yeast. Kent elected to keep his batch at close to the original output strength (1.049). |

Notes: This recipe is scaled to make 9 gallons of beer in a 10 gallon pot. I start with 9.5 gallons, boil it down to 8.5 gallons. I ferment in two 5 gallon corny kegs. Each Corny keg already has 1.25 gallons of preboiled, treated, chilled water. I brew the beer above gravity, bitterness, etc. knowing I will dilute it back down when I add it to the fermenter that already contains water. This allows me to brew 9 gallons of finished beer from one brew session. I usually only use this strategy when making lagers as it is nice to finish with more beer from the longer process and I can also fit 4 corny kegs in my fermentation freezer.
* I point this out because the volumes and amounts will likely look strange if you are trying to brew it. I would recommend going off of the percentages and scaling it to your system/volumes. |

Notes: Cream Ale Recipe
This is a very simple, inexpensive cream ale recipe that will get every BMC drinker in the room enjoying homebrew. So named because of the three different crops that go into the grist (Barley, Corn and Rice).
I brewed up 10 gallons of this and after kegging, bottled up a case to take to a family event (Mothers Day). Even my 78-yr old FIL, who is strict Miller Lite drinker, ended up having two pints. The chics dug it and we ran out well before the end of the evening.
The grain bill is cheap and in this case, you can use Minute Rice instead of flaked rice. No step mashing required. Simply combine the ingredients and follow a simple single infusion mash at around 152 degrees. I also mashed this for 90 minutes to get a highly attenuated beer. FG was 1.005...leaving a very dry, crisp beer with no noticeable graininess.
While this doesn't adhere to the strict beer laws, and I don't consider this one of my "craft" efforts, it is without a doubt the beer that I get the most "you really made this beer?" comments.
So if you've got some hard core "If it ain't Budweiser it ain't beer…" drinking friends…give this a try.
This beer clears up quickest of any of my recipes. |
