90 minute mini mash
30 min hop stand at 55-65 C.
pitched 2 packets of oldish m29 at 25C, into chilled bath 17C.
Foil over top of fermenter.
Monday morning 23 Nov removed from bath, 6 pm 22.5C, 8 brix=1.019, put temp controller on to 23C. Tues 7:30 am 7 brix=1.013, upped temp controller to 24C.
Weds am 24C looks like 6 brix=1.007, Weds PM, looks like 5 brix=1.001, replaced loose foil with secured cling film.
6.5 litres into flagon with brett in linen cupboard. Bottled 5.7 litres 10 Oct 2021. |

Notes: Mash the grains at 155°F (68°C) for 45 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains to obtain 6 gallons (23 l) of wort—or more, depending on your evaporation rate. Boil for 60 minutes. For the lactose, remove the kettle from the heat, stir in the lactose, return the kettle to the heat, and bring it back to a boil for the remaining 10 minutes.
Do not introduce the whirlpool hops at the first whirlpool, as they will inhibit the Lactobacillus blend. Pre-acidify the wort to a pH of 4.5, then chill the wort to 95°F (35°C) and pitch the Lactobacillus blend. There’s no need to hold the heat at 95°F (35°C), but don’t allow it to drop much below 75°F (24°C). After a pH of 3.2–3.3 is obtained, reheat the wort to 180°F (82°C) and follow the hopping schedule for the second whirlpool. After the whirlpool, rest for 15 minutes, then chill the wort to slightly below fermentation temperature, about 66°F (19°C). Aerate the wort and pitch the British Ale yeast.
Hold fermentation at 68°F (20°C) for 24 hours once signs of fermentation are visible. Allow the temperature to rise to 70°F (21°C) during the remainder of fermentation, following the dry-hop schedule. After adding the vanilla and blackberries, allow the berries to ferment out at 70°F (21°C). |

Inicialmente, parto de 15L. Pero al no bajar la temperatura todo lo esperado, necesario meter 0,8L de agua fría para ajustar la temperatura hasta 66°C.
A los 3 días, casi ha terminado de fermentar. Le quedan 4 puntos pero le hago dryhop y bajo temperatura a 24°C. 2 días más tarde, echo el puré de granada. |

had eerst 45 L, maar dan kom je op maischdikte iets van 2l/kg. dat is te dik. heb t nu aangepast naar 25 liter inmaischen (wat wel maximaal lijkt, anders stroomt de pan over). Dan kan ik dus max 10 kilo mout eraan toevoegen. Voorspelling:

-14 liter verlies maischen spoelen filteren
+16 liter spoelwater
+1L kokend water
27 liter gefilterd wort
-5 liter verlies koken
22 liter wort
+19 liter koelwater
40 liter bier.
NOTITIES:
2.5 L/kg te dikke wort. Mik op 2.8-3.0 L/kg
25 L + 10kg was te veel, paste initieel niet in de pan.
