| Notes: This is a split batch for a pumpkin ale. I brewed a ~11g batch and put 4 gallons in one fermenter at 1.080, then topped it with 1 gallon of distilled water. This should make the lighter version around 1.064. I did not get good gravity readings due to mixing and temperature issues. |

Notes: Boil for 15 minutes after sparge to kill any wild bacteria or yeast in wort.
Cool remaining wort to 100 degrees. Use lactic acid to lower PH to 4.5 and and pitch lacto. Purge o2 with co2 and seal mash and boil with saran plastic wrap. Hold at 100 degrees until the ph is down to 3.2-3.3. 18-48 hours
Once target ph is reached, boil wort for 75-90 minutes to reduce DMS until 5.5 gallons is collected. Add the hops, yeast nutrient, and irish moss the last 15 minutes of the boil. Cool to 65 degrees and transfer to sanitized fermenter. Aerate with pure O2 with .5 micron stone, pitch yeast starter, and ferment at 67 degrees until complete. Increase temp 1 degree per day until temp reaches 72 degrees. take gravity ready and sample finished beer.
Cold crash to 35 degrees. Add 5 oz amoretti pineapple flavoring to sanitized keg purged of O2 with CO2. Run low psi into liquid post as you siphon beer to keg to minimize oxygen exposure.
1 pack of us-05 - Collect 1 L for yeast starter - cool to 65 degrees and pitch 1 pack of us 05.

Notes: So this one is a bit different. There is no true boil here, and I'm substituting juniper berries for juniper branches. While there are lots of juniper bushes/trees in the PNW, I don't want to grab the wrong one and poison myself.
Being a Sahti, there are no hop additions. The beer is also drank right after fermentation. I didnt put in a yeast because this recipe calls for BAKERS YEAST - I will be using Fleischman's Bread Yeast. You could also use Kveik Yeast
Mash is started low and increased in 3 stages.
1. 140 degrees for 45 minutes
Add 1/4lb juniper berries
2. 158 degrees for 45 minutes
add 1/4lb juniper berries
3. 178 degrees for 15 minutes. (This will pasteurize)
add 1/2lb juniper berries and 3 sprigs of rosemary |

Notes: The use of whole cone hops vs pellets after the boil is key to this recipe. The IBUs are definately high for a hazy, but the whole cone really mellows the bitterness
Split the whole cone whirlpool addition in half did the first at 192 deg for 15 min, let it drop to 180 added the rest, put the lid on held above 170 for 30 min. Total of 45 min then started chilling with copper coil. Next time I will bag the whole hops so in the end I can squeeze out their precious hop juice!!
Made a hop tea while bottling w/ 1 oz Ekuanot Cryo Hops and 0.5 oz Mosaic Cryo Hops. Held at 180 for 15 min then cooled for 5.
Tastes delicious, the ekuanot really gives a nice fruity bitter bite |

Notes: Fresh pack of yeast sprinkled right into the fermentor.
Brewed 5/20/15. Sat in primary for 5 weeks,then kegged (no secondary,no cold crash)and stored in garage; drew a gallon tonight (7/17) to force carbonate. Tossed only about 10 ounces before it poured clear.
Enjoying the hell out of this one as I add these notes, but truth be told, I'm not all that picky. |
