Notes: Sour mash technique. Mash as usual until time to sparge. Don't sparge, let mash get down to 120 degrees, take 8ozs of milled unmalted grains and mix them in with the cooled mash. Put aluminum foil directly on top of the mash. I have a metal mash tun so I left it on the burner, put a sleeping bag over the mash tun and put a heater in front of it to maintain a temp above 90 but below 125 degrees. Only had to turn heater on twice a day for about an hour each time. Leave for 24 hours and sparge as usual. Very delicious and not overpowering sour. Enjoy! |

2L Starter for 34 hours with 1 cup DME
Put starter in fridge then decanted off most wort, not sure if decanted too much and dumped some yeast accidentally.
Forgot 1lb Flaked Wheat in recipe, head retention will suffer. will ferment at 65F for 2 weeks.
8/2/15- dry hopped with 2oz Columbus and added oak chips that had been soaking in vodka for 2 weeks SG was 1.011 which leaves 7.7% ABV. Will leave on chips and hops for 6 days then keg. This will be my first kegged beer |

Yeast nutrients added at 10mins
80min boil
Post boil 1.049
Added 50g Dextrose and 110g LDME into kettle after boil had finished.
OG 1.051
23°C into fermenter, chilled to 21°C added yeast and chilled to 20°C
Fermentation temp started at 18/19°C and raised to 22°C over 5 days.
1.020 after 4days. Tasting good. Very roasty and lingering bitterness.
FG1.016 at 6 days. As above. Great roasted toasty aroma. Moderate to strong complex roast flavour. Clean fermentation with low to moderate esters.
4.6% Abv
140g Dextrose for priming at 2.1 volumes
Bottled 14-4-18 tasting great
Drinking great 25-4-18. Plenty of medium roast character but in balance.
