10.5-1.18 + 0.5 (equip loss) = 9.82 gal water to start
boil 10 gal water for 20 min, add 2 capsules BrewVint Yeast Fuel
Cool to 110 F
Dissolve in honey, and cool to 70 F.

wrap in heater / electric blanket, target 72F.
Day 2, 4, 6: Gently stir and add 4.5g wyeast yeast nutrient and 2g of Diammonium Phosphate (DAP) per 5 galons
after fermentation stops, add 32 oz Tart Cherry Concentrate.
after fermentation stops, dryhop 7 days. (Use CryoHops because they have a higher AA, but more delicate)
add 2 cups honey dissolved into 1 cup boiling water to each 5 gal keg.

| Notes: Warm up hot water (21L), add it to the fermentor (demijohn), let it cool down. When it is about 20 degrees, make a 60 degree bath for the honey (5kg) and let them sit in there for 20 minutes, then pour them in the fermentor (they are less viscous) with the proper amount of nutrient. Stir them well, let them cool to 20 degrees, add oxigen and pitch the yeast. Ferment at 14-15 degrees. |
