Notes: Mill the grains and mash at 152°F (67°C) for 90 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate.
Boil for 60 minutes, adding hops according to the schedule.
After the boil, chill to about 50°F (10°C), aerate well, and pitch plenty of healthy yeast. Ferment at 50°F (10°C) for 14 days, then allow to rise to about 65°F (18°C) and hold for another 14 days.
Crash to 35°F (2°C), package, and carbonate to about 2.5 volumes of CO2. |

Notes: DIRECTIONS
Mill the grains and do a Hochkurz step mash: Start at 144°F (62°C) and rest 30 minutes; raise to 158°F (70°C) and rest 30 minutes; then raise to 168°F (76°C) for mash out. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate.
Boil for 60 minutes, adding hops and finings according to the schedule. After the boil, chill the wort to 60°F (16°C), aerate, and pitch the yeast. Ferment at 60°F (16°C) until fermentation is complete. Test for diacetyl or allow it to free rise for a few days for a diacetyl rest. Once gravity has stabilized and fermentation is complete, cold crash and lager for a few weeks, until the beer is clear, or longer.
Package and carbonate to about 2.7 volumes of CO2. Serve in 200ml stangen for the optimal experience!
BREWER’S NOTES
Mashing: For more about the benefits of a Hochkurz step mash, see Short and High: The Hochkurz Mash. Don’t be intimidated by the multistep mash. It’s not a requirement, but our goal here is a very dry beer. If you’re unable to do a multistep mash, you can still get great results from mashing at 148–150°F (64–66°C) for at least 60 minutes.
Ingredients: German malts are traditional for the style, but we love the beautifully complex character we get from Sugar Creek Malt. As a bonus, they’re local to us. Same with the Mackinac hops, which are locally grown and lend a touch of unique citrus-melon-spice without moving our Kölsch out of the traditional flavor profile.
Totally Optional: Kölsch is great because it’s delicate, and that allows small changes to shine through. Switch up later hop additions for a subtle tweak, substitute wheat malt for the Vienna, or go nontraditional and condition on some fresh lemon zest (one lemon’s zest per gallon works well) for a tasty, dry, shandy-like treat. |

Notes: 1. Line kettle with the mesh bag, fill with 2.5 gallons of water and bring to 165°F. Remove from heat.
2. Mash-in by slowly adding grain into the water and inside the bag. Stir for 2 minutes to prevent balls of grain from clumping together, creating a consistent mash. The temperature should equalize to about 154°F.
3. Cover the mash, briefly stir every 20 minutes. Heat 3 more gallons of water to 185°F.
4. Confirm conversion (After 60 minutes) with iodine. When done mash-out by carefully pouring the 185°F water into the mash, stirring to equalize temperature to about 170°F.
5. Remove the grain bag out of the liquid and suspend above the kettle for 5 to 10 minutes as the wort drains. Top the wort off and bring to boil.
6. Add Hallertu hops in a mesh bag at start of boil.
7. At flame out, add remaining hops.
8. Using a sanitized auto-siphon remove wort to take a gravity reading with your hydrometer.
9. Pitch the yeast and ferment at 68°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 74°F (23°C) by the end of fermentation to ensure full attenuation. |

Mash: strike water was heated to 170F. Was 165 once poured into mash tun. Mashed in, was at 160. Added ~1qt ~65F water to hit 152F in tun. Start mash 10:15. At 10:30 it’s at 150F. At 11:05 it’s at 148F. At 11:15 it’s at 147F.
Sparge water kept at 175F in hlt. Start lauter at 11:20. Finish lauter at 12:35. Final runnings we’re at 1.006.
