Notes: Mash as usual and sparge to 6.5 gallons of liquid. Boil for 15 minutes, adding no hops. Chill to 90 degrees. Add Lactic Acid ot adjust down to 4.4PH. Add .6L Goodbelly Probiotics, cover with cling wrap and lid. Sour until PH is 3.3.
Bring to boil. Add hops at boil (15 minutes), other adjuncts at 10 minutes.
Chill as usual to 68, move to fermenter, and pitch yeast. |

1oz bag of Styrian opened accidentally, so split between last two additions
last addition at end of boil before whirlpool - hoping for some great aromatics -
both hops smelled great before adding -
- EKG more lemon and orange peel and earthy spice,
- Styrian more floral and juicy and bright
Wort:
8* Plato/Brix / 1.032 SG
looked good, smelled of nice hops, no off flavors, not too bitter or harsh in any way
YEAST / FERMENTATION:

15 gal wort
- dregs pitched at 72* when wort was just above sample arm:
taras boulba, de ranke saison, the bruery mischief - opened throughout the day
- FV resumed filling after 15-30 minutes
- more than enough Dupont yeast from STW pitched at 72* ~2hrs later
FV2
10-11 gal
pitched at 70*: 2 smack packs Wyeast 3726, 1 packet WLP 566
STW and commercial yeast put out to room temp for ~24 hrs

Notes: ** YEAST STARTER **
1. 4 Days prior to Brewing, make 10% DME solution in Erlenmeyer Flask.

Starter: _____ gm DME / _____ L (per MrMalty.com)
2. Apply Ice Bath until Temperature reaches ~70F.
3. Squeeze 2 packets of WLP800 into DME Solution.
4. Cover with Aluminum Foil + apply to Stir Plate for 24 hours.
5. Refrigerate for 72 hours, then decant ~50% of the spent wort.
** MASH **
PRE-HEAT MASH - 2 gal of Boiling Water
PRE-HEAT SPARGE - 2 gal of Boiling Water
(conduct Simultaneously)
Water Volume: 4.2 gallons for 1.5 lb/qt ratio.
1. Prior to heating HLT, check pH of tap water
pH: __________
2. STRIKE WATER: 167F.
3. Add Grains @ 165F.
4. Add Mash Salts (as needed per water report)
5. Allow Temperature to fall to 154F prior to closing lid.
6. Total Mash Time: 60 minutes

7. Add 5L of Boiling Water at the end of Mash and stir into solution.
8. Begin Vorlauf!
** SPARGE **
1. Heat 6.5gal of Water to 177/178F. Add to Sparge Vessel.
2. Recirculate 4 times prior to collecting wort.
3. Attempt to Sparge over 30-40 minutes.
** BOIL **
1. Check Pre-Boil Gravity (goal: 1.043) + pH
** NOTE: Make sure to adjust for TEMPERATURE **

12. Gravity feed wort from Mash Cooler into Catalyst Fermenter
13. Allow Ranco/Chest Freezer to adjust wort temperature to goal starting temp (45F)
ORIGINAL GRAVITY: ______________ (goal: 1.055)
** FERMENTATION **
1. Goal Starting Temp: 45F. Oxygenate for 60s prior to Pitching.
2. Pitch yeast @ 45F. Hold temperature @ 45F until signs of Fermentation begin, then increase temp by 1F every 12 hours until 48F.
3. Once signs of Fermentation begin to slow, increase temp by 1F/24hr until 51F.
3. After diacetyl has cleaned up, cold crash beer to 40F for ~7 Days prior to transferring to Keg.
