Mash grains at 152°F (66.7°C) for 60 minutes. If including a mash out step, raise temperature to 168°F (75.6°C) and hold for ten minutes. Sparge with 168°F (75.6°C) water to collect 6.53 gallons (24.7 liters) of wort.
Bring to a boil and add hops as indicated. At flameout, stir wort to cool slightly and add whirlpool hops. Let rest for 20 minutes before chilling the rest of the way to pitch temperature.
Pitch yeast. Ferment at 60–62°F (15.6–16.7°C). Add dry hops towards the end of active fermentation, when specific gravity is around 1.020–1.024 (5.1–6.1°P). Let rest for four days or until fermentation is complete.
Cold crash to drop hops out of suspension. Rack to secondary or keg. |

| Notes: Eight weeks in primary, 4 weeks in secondary. Added real (not vanillin) vanilla extract in secondary along with 15psi CO2. Tapping this beer at 12 weeks is not recommended. Aging vastly improves the character of this brew. However, due to Covid-19 stay at home orders, I chose to tap early. Usually, this beer would age 10 months in secondary with CO2 at roughly 65 degrees F. |

Notes: 1st infusion - Heat 5.85 gal water to 174 degrees. Add 6g of gypsum, 0.5g epson salts, and 2g calcium chloride to the water. Then use all but 1 gallon of that to add to the mash for 1st infusion. Add add 4.1 ml of lactic acid to mash and stir in. Test PH. Target mash temperature is 156. At 30 minute mark, add the remaining 1.00 gal water to raise temperature as needed. At the 60 minute mark drain the mash. 1st runoff should be 3.88 gal.
2nd Infusion - Heat 3.87 gal of water to 183 degrees. Add 6g of gypsum, 0.5g epsom salts, and 2g calcium chloride to the water then add water to mash. Add add 0.79 ml of lactic acid to mash and stir in. Test PH. After 20 minutes drain the mash. 2nd runoff should be 3.87 gallons.
