Notes
1st infusion - Heat 5.85 gal water to 174 degrees. Add 6g of gypsum, 0.5g epson salts, and 2g calcium chloride to the water. Then use all but 1 gallon of that to add to the mash for 1st infusion. Add add 4.1 ml of lactic acid to mash and stir in. Test PH. Target mash temperature is 156. At 30 minute mark, add the remaining 1.00 gal water to raise temperature as needed. At the 60 minute mark drain the mash. 1st runoff should be 3.88 gal.
2nd Infusion - Heat 3.87 gal of water to 183 degrees. Add 6g of gypsum, 0.5g epsom salts, and 2g calcium chloride to the water then add water to mash. Add add 0.79 ml of lactic acid to mash and stir in. Test PH. After 20 minutes drain the mash. 2nd runoff should be 3.87 gallons.
