-Starting mash temp = 152 degrees
-Stirred the mash every 15 minutes to increase efficiency
-Mash in pH range of 5 according to pH paper
-Final mash temp =151 degrees
-OG = 1.073
-Didn't boil off to 4 gallons. Around 4.5 gallons. Probably made some of the gravity difference.
-Noticeable fermentation did not start for 48 hours.
-Vigorous fermentation at 67 hours.
Gravity on 8/7/20 = 1.020 (7% ABV)
Pronounced dark caramel and raisin notes, notes of brown sugar, slight alcohol warmth.
FG on 8/25/20 = 1.021 after temp correction
ABV = 6.83%

| Notes: Single infusion mash at 155° F (68° C) for 60 minutes. Add first wort hops (FWH) as wort is being collected in the boil pot. Boil for 60 minutes, following ingredient additions as listed. Turn off heat and let temperature drop to 198° F (92° C), then add the whirlpool hops and whirlpool for 30 minutes. Chill to 70° F (21° C), transfer to a fermenter, and pitch yeast. 2 days after pitching the yeast, add the first dry hop additions (1 oz Citra; 1 oz Mosaic). After active fermentation has stopped, typically 4-5 days after pitching the yeast, add the second round of dry hops (1 oz Citra; 1 oz Mosaic). A day later, burp your fermenter (if possible) with a 30 second burst of CO2 to rouse the hops. Add 2 oz Citra and 2 oz Mosaic pellet hops 8-10 days later. Just before kegging your beer, bag and add last dry hop additions (1 oz Citra cryo; 1 oz Mosaic cryo) to the keg or bottling bucket. Enjoy! |

Notes: Add d-45 Candi Sugar with 5-10 mins left in the boil.
NARRATIVE: 90 minute boil. Chill to 62F. O2 for 60 seconds. Ramp primary starting at 62F then raise to 68 over 7 days
until reaching 1.010. Dump yeast or rack off primary to secondary. Rack at 50F for 1 week until reaching FG (1.008 –
1.009). Crash to 35F for 1 week. Bottle with pre-boiled Simplicity Candi Syrup at a rate of 34 grams/gallon (then hold
bottles at 72F for 10 days for initial carbonation). Bottle condition at cellar temps, (60F), for 6-12 months.
