Notes: I've had a couple of "golden stouts" that I thought were very interesting and good, so my goal was to mimic that with my own recipe. I wanted to use golden/blonde ale as a general style, though I knew this was going to fall outside of some style guidelines.
I used lactose to provide some residual sweetness (think creamer in coffee), which worked really well I think. I tasted the beer after a few days in the keg (pre- coffee addition), and it had some sweetness but not too crazy. To add coffee flavor, I got some whole beans from a semi-local roaster (Wichita Spice Merchant). I spoke with one of the roasters there and he recommended "Brazil Maniqueira" (https://www.spicemerchant.com/product/brazil-mantiqueira/). I know next to nothing about coffee, so I would recommend using something you like or, if possible, consulting your local roaster. I added 8 oz of the coffee beans to a nylon mesh bag with some glass beads (to use as an anchor), and suspended the bag inside the keg with some unwaxed/unflavored dental floss. I tasted at 2 hours and was surprised how quickly the coffee flavor came through, but it wasn't quite where I wanted it. I tasted again at 4 hours and 7 hours, at which point I decided to pull the beans. The beer is pretty light so I didn't want to overpower the beer with coffee flavor. It ended up adding the desired roastiness and complexity that I was looking for. I'm super happy with this recipe. |

| Notes: 90 minute boil with hops, adjuncts and nutrients as needed. Chill to 64F. Oxygenate slowly through 0.05 micron diffusion for 90 seconds (we’re after 9-10 ppm O2). Ramp primary from 64F to 78F through 7 days. At 1.014 rack off primary yeast to secondary and cool to 55F. Hold for 5 days+ until the FG of 1.013 is reached. Dump yeast a second time, lower temp to 40F and hold for 6 weeks. Bottle using heavy Belgian bottles or Champagne bottles. Prime with 31g/gal Golden Candi Syrup and re-pitch 500ml Westvleteren strain stir-plate. Bottle re-ferment for 14 days at 76F. Cellar for 12 months. |

Notes: 60 min. boil, then chilled to 70 deg. OH SHIT!! Somethings not right. I forgot to add the whirlfloc, Back to the burner for a 2nd time. Boiling again, got another hot break, and skimmed it off. Whirlfloc in for 10 min. then chilled to 70 again. (Hence the name) 2001 Wyeast Pilsner Urquell lager yeast in a 1 ltr. starter pitched at 70 degrees,air lock bubbling good @ 3 hrs, then to 50 deg. for 21 days. Raised to 60deg. for 24hr. diacetyl rest. Then 14 days @33 degrees SG 1.060 - FG 1.016 ABV 5.7 Waiting on the finished product for taste test.
Beer was the best I have made yet. My buddy who has always been a store buying, American mega brewery beer fool, had to be run out of my fridge. He is now on the craft beer train.
Pulled another bottle or three out and partook while watching football yestiddy. This brew started great, and just keeps getting better and better. DAYUM!! I think I'm turning Germanese, I think I'm turning Germanese, I really think so. |
