"NOTES: Ferment under pressure (15 psi max) at 65-70 F. Wait a couple extra days for diacetyl rest to finish. Rack to keg and chill into the mid 30's F. Add gelatin (after preparing per instructions). Purge CO2 from head space. Force carbonate for at least another day. Gelatin Instructions: Boil 1/4 cup water for a few minutes to sanitize it. Allow to cool a bit (<~170 F). Mix in 1/2 tsp gelatin."

Notes: Just Watched England thrash Panama 6-1. It needs a beer.
Had to (slightly) adjust volume levels above to achieve what actually happened. Boil Size was 19.75. Post boil size was very near 13 Lt. with a SG of 1.078!!! NOT WHAT ABOVE CALCULATED TO - Why?
This required an addition of 4.2 Lt to get calculated starting SG of 1.059. This (should) mean a final ABV of 6.1%. Fermenting seemed to stop so added Youngs Yeast which went off like a rocket.
Taste test of SG sample of 1.021 (3 days in) suggests Strong Taste. Will sample again on Sunday 1/7/18 when Ferment should stop and DryHop start in Secondary FV.

Notes: Water - very soft, proud of their use of Cornish water
Malt - A lot of Simpsons Pale Malt, Crystal 120'l and 1000'l black malt around the place
Mashing - Mash low! 64c tops was what i recall he said, he also commented that my 67c Pale ale mash temp was "too f*ing high!"
Hops - Hops mostly added late on, he said their three main hops were Aurora, Northdown and Hallertau which they balance depending on harvest etc, but there was lots of Perle around also.
Yeast - Its the old Morrells Brewery yeast, they are the sole users/holders of it now. I think he said it was a whitbread derivative, which makes sense as he said it was highly flocculent.
Fermentation - hot! 25c was what he told me, which makes sense why the beer tastes so dam fruity! 5 days then 7 conditioning, obviously thats done in huge volumes so not much help. But they do use square fermenters (like Black sheep) and condition under pressure. |
