Notes: Coffee Pumpkin Spice Stout
2 cans of pumpkin in the mash! Yes, the mash was slow.
1 lb lactose in mash/boil, while .5 added in secondary for tweaking flavor/sweetness balance.
The BU:GU ratio is purposely very low because the coffee will add bitterness to balance the BU:GU. Brewer's Friend does not have a way to account for the bitterness of coffee.

Notes: Whirlpool for 10mins then let steep for 30mins. Chill to fermenter. Dry hop 44g cascade for 3 days & 44g centennial. Transfer/rack then dry hop the rest for 3 days. Keg after fining.
Yeast pitch: make 8L starter add 1vial of yeast, rack off wort after 24hr then pitch slurry

Notes: This taste wonderful even without the dry hops. 07/10/2016 put 2 oz of Amarillo in for dry hopping. Tasted it on 7/13 still needs a few days.
Finished the dry hop and now it has a high bitter taste, hopefully that will settle out a little. I think this has something to do with extruded pellets. |

Notes: -Mash for 60 mins.
-Sparge.
-Boil for 15 minutes to sterilize.
-Pre-acidify wart with lactic acid to 4.5pH to aid souring, prevent spoilage and supposedly help head retention.
-Cool down to 32-33c.
-Add Lacto culture. (IBS support pills (7) 140 billion lactobacillus plantarum)
-Cover and let sit for ~12-36 hours at 31c until soured to your liking (3.2-3.4 pH).
-Re-boil for 45 minutes with hop additions and finings.
-Chill, pitch 2 packets yeast (With nutrient maybe), ferment.
-Pre-boil gravity was 1.055
-After pitching 7 IBS pills (mistakingly without opening the caps), 17 hours in the pH was still at 4.5. I pitched another 5 IBS pills this time opening the caps. 12 hours later the pH was 3.6.
-I'm aiming for a pH of 3.2-3.4. |

Pitch yeast at 65, maintain temp until final gravity is reached. Boil oak cubes in Port Wine and cool. Add to secondary fermenter and rack beer. Secondary fermentation at 65 for 14 days, then bottle condition 2 weeks.
