Notes: 5 Gallons of Cider.
Dissolved the sugar in half a gallon of cider at 180deg. Added the spices and orange at this time.
Used Lavilin 71B - 1122 white wine yeast.
Added one cranberry juice concentrate at kegging (after stabilization).
FG was actually .995
This is pretty dry. If you want it sweeter, add more cranberry concentrate or add some apple juice concentrate. |

The oak is optional but I think it enhances the vanilla beans.
Add oak/vanilla beans to secondary 7-14 days.
The amount of bourbon used is up to you. Start off at 1 cup and work your way up. 1.75 cups is the sweet spot for me.
The bourbon doesn't have to be Evan Williams. Use what you like. |

Here's the recipe we've been using for our pinot noir barrel solera project: http://beersmithrecipes.com/.../american-solera-saison Ferment with whatever belgian strain you prefer (i use my wild caught stuff) then once in the barrel brett and (eventually) lacto go to town on the remaining sugars and make an awesome funky brett beer with a mild tartness. We exchange half of the beer once every 6 months or so, whenever we can all get around to brewing the recipe.

Add 0 min boil hops and let stand for 60 minutes.
Drop the temp to 175F or so and add Aroma Hops and continue to chill.
Pitch 2 packets and Ferment at 68F for 14-17 days.
Cold Crash to 38F for 2 days before racking to secondary. Rack to secondary vessel, bring back to 68F, then dry hop for 4 days (2 days with Nelson then add the 4oz mixture for 2 more days), makign sure to stir the dry hop every 12-18 hours.
