| Notes: Sample Brew-in-a-bag equipment profile set up for a keggleand using a polyester grain bag to hold the grain. This profile should be used with the BIAB mash profiles available in the BeerSmith mash profiles area. The above assumes loose pellet hops and only clear, chilled wort transferred from the kettle using no trub management techniques. Experienced brewers should adjust 'Loss to Trub and Chiller' and 'Brewhouse Efficiency' accordingly to suit their trub management techniques. Notes: In the Ardennes forest between France and Belgium, they say gnomes used to supply the locals with high quality beer. But what were the gnomes drinking? Alternative grain beer obviously. Millet, rice, and buckwheat with a handful of new world Azacca hops and yeast from the Ardennes. It's Gnome AF.

Notes: Mash: Start at 113 degrees and ramp up to 145. Hold a few minutes, then ramp up slowly to 162 degrees, complete mash, mash-out and sparge.
Ferment at 68 degrees for ten days, let rise after 1/2 of sugar consumed. Rack, then continue fermentation until stable.
This has made an excellent Saison, easy drinking, light fermentation character reminiscent of tangerines. It's a bit thick though, silky from the wheat, which need to be dropped from the recipe. I need to get a scoresheet and judge it. Modified 10/22/22, Wheat dropped. |
