Notes: 90 minute boil. Chill to 64F. O2 for 60 seconds. Ramp primary from 64F to 68F over 6 days. Secondary at 60F until FG is reached. Then crash at 38-40F until ale clarifies. Prime with golden candi syrupat 30grams per gallon. Bottles at 72F for 10 days. Bottle condition at cellar temps for 12 months. |

Notes: Ferment less than the suggested temperature to subdue the phenols. Authentic German Heffs do not have the strong phenols that many American commercial products have. Pitch with a starter to counter low temp.
Use Gambrinus(SP?) Honey malt for a light honey flavor. No more than a half lb.
Cold Crash for 3 days @40F after primary fermentation is complete. |

Bottled on Nov 27, 2016. Added 5.875 oz of DME for priming. FG = 1.026
