Notes: The basic recipe came from the home brew forum, but the variation here used less flaked wheat, more pale wheat, and more base malt.
Original portions were pil malt 50%, flaked wheat 30%, 10% white wheat and flaked oats. Also added rice hulls cause I know I will need them in my brew system. |

Notes: Primary Fermentation: Was complete within 1 week. 3rd successive identical FG measurement taken on day 9.
Secondary Fermentation: 6-9 months with the majority of that time spent aging on oak cubes (see below)
Add 1.3 oz. Hungarian Oak Cubes (med. toast) and 0.7 oz. American Oak Cubes (Med. plus toast) to secondary
Prepare by soaking in bourbon x2 weeks. Discard bourbon (it's hard to take away bourbon flavor once it's added to the fermenter!).
The story behind the name:
Baptist minister and distiller, Rev. Elijah Craig (1738-1808) is widely credited with inventing Bourbon Whiskey, and was the first to utilize extended aging of the spirit in charred oak casks to impart Bourbon's distinct flavor and color. |

Notes: Using Wells Bombardier mash schedule and yeast.
Hop schedule is Fullers.
Efficiency all whacked out on Brewersfriend..and yeast did not attenuate as much as I hoped. ABV worked out perfectly for schedule...right between Fullers ESB cask and bottle...5.7-5.8%.
I did the aroma/whirlpool hops in a hop sock and squeezed it. Out of the fermenter it looked and smelled amazing. No gelatin necessary...super duper clear. |

Primary Fermentation - The hops are missing as bitterness - add 1.5 kg.(+1.3-1.4% abv) brewing sugar in 5 l. of water and 15 g. of Cascade hops boil for 15 min. put in primary.
Dry hop with 15 g. cascade in secondary.
The expected abv is 6.5%.
American - Pale 2-Row is BG Malt.
German Wheat Malt is instead of flaked oats.
Third hop addition is after boil( in primary) there was a lack of bitterness so I added a bit. |

Notes: First try of this brew and turned out pretty well. The Olicana hops give it a nice citrus flavour but it was quite subtle so for 2nd batch I have upped the amount of dry hops to 70g. |
