Notes: Obtaining the enzyme extract:
after 30 min at 60 C pull and filter 500 ml of wort. Cool it (possibly in an ice bath) and put aside. Use that enzymatic active wort to wake up the yeast and then add it to the beer along with the yeast. It will continue the breakdown of dextrins during primary fermentation.
NOTE: Don't bottle condition this beer unless you you know if the breakdown of dextrins is complete. |

Notes: Tea additions should be made at Flameout and during secondary fermentation. Tea-bags can be substituted instead of whole leaf and petals. 4 bags at flameout and 6 bags in secondary. Monitor daily when dry-hopping with the tea bags and rack off when you hit the desired profile, as the flavor can intensify quickly. A warm ferment and a long secondary are essential to a good saison. |

Brewing a full flavoured craft beer at 0.5% is no easy task. Packed with loads of Centennial, Amarillo, Columbus, Cascade and Simcoe hops, dry hopped to the brink and back and sitting at 55 IBUs, Nanny State is a force to be reckoned with. With a backbone of 8 different specialty malts, Nanny State will tantalise your taste buds and leave you yearning for more. Get hops in every stage of the brewing process - mash, run off boil and flame off. There's not too much malt body, so the more hops the better.

Notes: Fermented it on my back porch for the first ten days when it was around 50-60F. Then transferred it after about the 10th day to the secondary fermenter and into my unheated foyer, where it was around 45 for the past 4 weeks. Just bottled it yesterday with cane sugar primer and will store for three weeks at room temp before storing in my cellar for another month at 55. I tasted the beer at bottling and it has a nice crisp, slightly bitter, dry and malty. running about 6.2% ABV. Clear gold color. I really liked this Munich Lager yeast as it really performed in colder temps and attenuated nicely. |
