Instructions for use
Fill the boiler with 20.6 litres of water and bring to a temperature of 45 degrees C. Add the Calcium Sulphate
Mash in by slowing pouring the grain into the boiler, stirring well to avoid any clumps – (Good practice to check your mash pH, your aiming for a range of 5.2-5.6)
Mash for 20 minutes at 45 degress, increase mash temperature to 64 degrees, continue mashing for 75 minutes.
Sparge with 14 litres of water at 75 degrees.
Then bring the wort to a rolling Boil for 90 minutes, add hops as indicated on the hop bags, all our hop additions use t bag technology
-Add the 60 minute addition after boiling for 30 minutes then add the remaining as you count down in time and add the whirlfloc tablet 10 minutes prior to the end of the boil
Transfer & Cool the wort to 18 degrees C into the fermenter and pitch the yeast
Fermentation will take place for approx. 7-10 days
5 days into fermentation add the dry hop addition, checking gravity is below 1.020
Bottle or keg as normal.

Notes: this came out great, my best effort yet. Very fruity (sweet grapefruit) with nice colour and haze, my details on the hop editions are uncertain (they occurred after flame out and before the whirlpool).
I am not sure under which category to log that in the recipe.
cost of all ingredients was $42
CTZ hops from BSG had 13.9%AA
Citra(25.2%) and Simcoe(26.5%) were both cryo hops from Yakima chief so I used half of what is stated in the recipe.
The Citra hops were added to the fermentor two days after the yeast were pitched. The beer was actively fermenting by this time, but took a full 24 hours to get going. fermented on a basement floor in an unheated space that remained about 14 C.
Next time use hop bags, even for the dry hops???? |

Notes: After Sparge….raise temp and boil wort for 10 min...turn off burner chill to 95F and add enough Lactic Acid to reach a ph of 4.5 (I have 4 tsp listed)...Add 16 oz of Pomegranate Blackberry Goodbelly drink, purge with C02, cover with cellophane and wrap in a blanket...maintain at 95F for 24 hrs.....then test for PH...target is 3.3 - 3.5, boil recommended time, add hops and flavorings per schedule and then chill to 64F.
Ferment for 5 days, 2 days at 64F then 3 days at 65F. Add 192 oz of POM juice....(four of the 64 oz containers) and let ferment for an additional 7 days....at 66F. Transfer to Keg and chill to serving temp and carbonate to 3-3.5 vols. Enjoy!!

The Author Scott explains how he came across this recipe and his perception of it. I made this with minor tweaks. I used magnum hops for bitterness. and scaled back the hop additions 1 oz at 0 minutes. I added 30 pounds of 2 row and 10oz of sugar cane for easy math. I am going to brew this version soon I will post my version as Pliny the Elder 4.1 and gallons. |

Notes: last dubbels I've brewed have been infected with my crazy house lacto/bacteria strain that runs amuck. So I payed extra attention to sanitation with brand new PBW with hot/warm water all the way to the top and brushed out, along with new star sanz to follow it out. I even baked the plate chiller just for insurance.
