Notes: Brewday notes:
- Used 3 smack packs of Wyeast for each carrboy
- Hit 149.7 vs 152 target mash
- Hit 1.053 vs. 1.054 expected
- 9.75 gallons made it into 2 separate 6.5 gallon carboys. Expected 10 gallons.
- Chilled wort down to 46F before pitching yeast
- Started fermentation at 50F for day 1 (fermentation was noticeably going within 24 hours) and held for 12 days, then did 2 a day diacetyl rest at 55F
- Hit 1.008 vs. 1.013 target final gravity
- Started lagering and right away put chest freezer at 50F when wort was 55-56F, lowered to 47F next day, then brought down a few degrees a day until 33F and held for a total of 4 weeks lager schedule
DS 11.19 Edits: Lowered primary grains to 13 lbs pils, 4 lbs munich to hold OG down. Increased boil size to 13 gal to permit excess boil off. Adjusted water to include 5g each of gypsum and SoCl to increase hardness of water (balanced). Consider alternate yeast 2124.

Notes: Home grown spontaneous Lacto
1c raw uncrushed 2-row add 1c 130F water, mason jar. Allowed to grow at room temp for aprox 1 week.
Split wort into 2 3G carboys and pitched this homemade Lacto (added a little water and sluried it around, pitched the solution) into one and added the WY5335 into the other. After a 3 day head start at about 90F, added dehydrated Safale 05 into each CB and allowed to finish. Racked after about a week, keeping each separate. Home made Lacto was much more sour. Bottled this and primed for 3.5v and after 3 weeks at room temp, first test was pretty much perfect. |

Notes: Dissolve the sugar in 2 gals. of juice at low boil then reduce heat and add 3 gals. cider and 5 tsp. yeast nutrient and steep at 180 for 30 mins.
Let cool, put in bucket, airate and pitch yeast.
Ferment at 65 for 7 days then transfer to secondary for 7 more days. |

Notes: Brewed 3/23/14. Hit 150F with a about 1 pound of re-circulation. Little stuck when recircing so I cleared it by back blowing into a tube. I actually forgot to make the water profile and accidentally used the golden strong one. Seems to be about right for this beer as well though. The pH reading was 5.1 which is a little low. Not sure if that is the actual reading or if it's because my probe is going bad. Into kettle efficiency was 89%. I stopped the sparge at about 8gal and about 2.5 (1.010) brix to avoid extracting tannins. Also topped of with a quart of regular water to bring to boil to 8.25gal. Got 5.75 gallons on the nose. Hit my expected OG very well too. 3/14 I chilled it down a lot last night and apparently too much because this morning it was sitting at about 59F. Will let it ramp up throughout the day to hopefully about 65-68F. By the evening it has drifted up to about 63F. 3/25 temp had drifted up to 67F by the morning so cooled it down to about 65F. Crept up to about 68F by evening so I chilled it down to 65F. 3/26 the temp was still about 65F in the morning but had crept up to about 66/67F by evening. 4/6/14 took a gravity reading and biofined with 2 tbsp. Kegged 4/10/14. |

Notes: Sugar is added 5 minutes until flameout directly to the boil
1/2 minerals added at mash the other half added during the boil after sparging.
Ferment at 64 then let naturally rise into mid to high 70's to finish. Add oak once most of ferment is done before racking for 5 days.
Total water needed is 20 gallons. Mash strike temp is 9 gallons at 130. Sparge at 170 with the other 11 gallons Use Herms to keep mash range at 145 for 45 minutes then raise up to 150 for 15 minutes.

Notes: Add fresh ground coffee and vanilla beans sliced lengthwise to secondary for 24-72 hours, depending on preference.
I've found adding coffee grounds to secondary makes for a less bitter brew than boiling. the difference between vanilla bean tincture vs added to secondary seems to be unnoticable.
Let this beer condition for at least 2-3 months in bottle
