Notes: Yes, this is built for a non-alcoholic beer. Aim for a good alcoholic beer to get a goon N/A beer. It is easiest to keg. Carbonating in bottle is difficult.
Ferment normally and keep on the primary yeast cake as long as you would like. Rack into boil pot and bring temp up to 182-187F and hold temp. Small bubbles will appear and a foam will develop on the surface of the beer. This is the alcohol burning off. When foam is gone cool and rack to secondary (I rack to keg) Dry hop for two weeks minimum. Carbonate normally.
If you want a good beer with alcohol then ignore the previous and ferment normally. rack to secondary and dry hop for 14 days. Carbonate and enjoy.

Notes: Mash at 149 for 90 minutes with a Ph of 5.5 Sparge with 185 water. Collect 7.0 gallons in the kettle and boil for 15 minutes.
Cover and let cool to 115F. Added lactic acid (about 4 ml) to get the Ph to 4.6. Lactobacillus brevis 2 ltr starter, purge with CO2 (from picnic tap of Empty Keg going into headspace, and then wrap whole kettle in plastic wrap. Keep temp between 100 and 115 using therm wrap. Check pH after 24 hours. Target Ph is 3.3-3.8, preferably 3.4
Be prepared to boil and finish the beer after 24, 48, or 72 hours when target pH is reached. Pitch a 2 ltr starter of Brett (or US-05 for a cleaner ferment) |

Notes: Heated water to 170 - 4.0 gallons went into the cooler and went down 5 degrees as expected. Added 13lbs of grain and temp readings showed readings from 144 to 157. Added more hot water because it was a thick mash and my temp was too low. Probably 5gallons. Generally leveled out at around 146-150. Would have preferred to have it at the 150-154 range and an opportunity to do more stirring down.
40 minutes into mash - stirred. Temps still ranging from 146-150. Exactly what I was hoping for.
Mashed for 70 minutes this time as well.
First run: 3.3 gallons
Second run 4.7 gallons
SG: 1.044 (11 brix) -- 75.54%
After 2 days, fermentation stopped for the most part
4 days later:
FG: 1.026 (6.57 brix) -- Refractometer Corrected @ 1.013 (3.20 brix) -- 75% attenuation
7 days later:
FG: 1.025 (6.3 brix) -- Refractometer Corrected @ 1.012 (2.98 brix) -- 77% attenuation

Notes: Off the top of my head, I think that was about where we finished. I think we had an OG of 1.072 and an FG of 1.015. 7.5% ABV, but you wouldn't know it when you tried it.
At start of fermentation, begin soaking 4-8oz of cacao nibs in vodka. After primary fermentation is complete, add cacao nibs and vodka to fermenter during secondary (for the remainder of fermentation). We used 4oz of Ecuadorian cacao nibs along with 2oz of Dominican cacao nibs from Ethereal Confections. We replaced the idea of using cold brew coffee concentrate with using whole beans.
As far as adding the beans, we just bagged some whole beans in a sanitized mesh bag and put them into the fermenter 36 hours prior to kegging. At over 8%, we figured there was enough alcohol to combat any problems |

Notes: A pretty strait forward ale and a great beer to use to build a yeast cake to pitch a huge stout onto. This beer is traditionally cask conditioned but very clear so S-04 would also be a great choice for yeast.

Notes: This English Extra Special Bitter is characterized by the mashing of a single malt (Best Pale Ale - Heidelberg), followed by the generous hopping of Summit, Cascade, Citra and Sincoe hops. This beer underwent additional late hopping (dry hopping) on the 5th day of fermentation with the Cascade hops. It presents dense and persistent white foam, high carbonation, moderate body, earthy aroma, but not citrus like IPAs, refreshing tropical flavor balanced between malt and hops. Harmonize with strong cheeses like, brie and gorgonzola and with roasts, like Iberian black pig. The high alcohol content, the bitterness of the hops and the high carbonation, help to cut the fat and clean the taste of the side dishes, so that the next bite is as tasty as the first. |
