Notes: -Mash for 60 mins.
-Sparge.
-Boil for 15 minutes to sterilize.
-Pre-acidify wart with lactic acid to 4.5pH to aid souring, prevent spoilage and supposedly help head retention.
-Cool down to 32-33c.
-Add Lacto culture. (IBS support pills (7) 140 billion lactobacillus plantarum)
-Cover and let sit for ~12-36 hours at 31c until soured to your liking (3.2-3.4 pH).
-Re-boil for 45 minutes with hop additions and finings.
-Chill, pitch 2 packets yeast (With nutrient maybe), ferment.
-Pre-boil gravity was 1.055
-After pitching 7 IBS pills (mistakingly without opening the caps), 17 hours in the pH was still at 4.5. I pitched another 5 IBS pills this time opening the caps. 12 hours later the pH was 3.6.
-I'm aiming for a pH of 3.2-3.4. |

Notes: I have bumped the grain bill up a little from the original but this works out nicely in my BIAB system.
I use Imperial A38 yeast not London Ale III (Wyeast Labs #1318)
1318 was what was original used. A38 JUICE is not listed on this site.
I do a step mash. This increased my efficiency and head retention.
I do a 170 sparge / rinse of the grain in a colander using 1.5 gallons of water. this puts me at a good 6 gallons in the fermenter.
that nest out to right about 5 gallons in the keg
ignore the water stuff I was just playing with that
I use well water and I add some calcium to harden it because I have a water softener.

Notes: Add ~1 # DME to brew pot water to lower pH to ~5-6.
Add grits in muslin bags and grains in separate muslin bags to 2.5 gallons spring water and bring to 150 deg., start 60 minute steep.
Remove steeping grains at 30 minutes, steep grits for additional 30 minutes.
Remove grits and bring to boil. Boil for 60 minutes total, performing hop, whirl floc and nutrient additions when necessary.
Add remaining DME and turbinado when 10 minutes left to boil.
Cool to 85 deg, combine with room temp (72 deg) water to achieve ~75 deg wort, check and adjust original gravity and pitch yeast.
Ferment at 65-70 deg.
Won 1st place in combined category, Historical/Smoked/German Wheat @ 2016 Philly Homebrew Cup.

Notes: This recipe is Vienna Lager style but boosted a little bit in IBU to counter balance the malty side.
Adapt the mash volume with the dead volume of your tun.
I use a Klarstein 50L brewing machine which has 6.5L of dead volume under the tun basket => take it in account for the mash thickness :
Strike water volume at mash thickness of 3 L/kg * 5.15kg + 7L = 22.5L (new mash thickness = 3.7L/kg)
Sparge water = 9.2L
Total water = 31.7L
Lost water (mash)= 3.6L
Lost by evaporation = 4L
Lost in the kettle = 2L
To go in the fermentor = 22.1L
Fermentation at 13°C during 2weeks min.

Step by Step
The traditional Pilsner Urquell utilizes an undermodified Pilsner malt that is malted by the brewery. The mash is subsequently triple decocted to help break down the protein matrix that is still present in the undermodified malts. For three reasons we have decided to change up the classic recipe. First homebrewers don’t often have access to undermodified Pilsner malts these days. Second, a triple decoction means a long and rigorous brew day for the brewer. Finally adding in a protein rest could be detrimental to the beer’s body and head retention. So we’ve simplified the mash procedure and added some malts to help adjust the color and add a slight toasted character that the triple decoction should otherwise add to the beer’s profile.
Mash grains with 15 qts. (14.2 L) soft water at 142 °F (61 °C) and hold for 30 minutes. Perform a decoction, pull 1/3 thick portion of the mash (~1.5 gallons/5.7 L) and bringing to a boil. Boil for 15 minutes being sure not to scorch the grain mix. Stir the decocted portion back into the main mash.
The main mash should now settle at 155 °F (68 °C). Hold for a 30 minute rest.
Mash out, vorlauf, and then sparge at 170 °F (77 °C) to collect enough wort to result in 5 gallons (19 L) after a 90-minute boil. Boil 90 minutes, adding hops at times indicated. Cool, aerate, and pitch yeast.
Ferment at 50 °F (10 °C) until signs of fermentation have slowed considerably. Some diacetyl is noted in Pilsner Urqell, but if there is a strong diacetyl presence at this point, 2-4 days at 65 °F (18 °C) is advised. Rack to secondary and lager for 4-6 weeks at 40 °F (4 °C). After lagering is complete, bottle or keg as usual. |
