Po filtracji otrzymaliśmy ok 8Blg brzeczki.
Chlodzenie do 38st C.
Dolanie 3 łyżeczki kwasu mlekowego.
Wsypaliśmy całe opakowanie SANPROBI - 20 kapsułek.
Było ok 15-18l. Potem owineliśmy folia spożywcza przykrywke i kocami, śpiworami, kurtkami
Po 5 dni fermentacji, ekstrakt był 6Brix refraktometrem, co oznacza ok 4.2 Plato po korekcie

Korekta PH - 8-9ml na 15 litrów brzeczki. Daliśmy 3 łyżeczki.
Schłodzenie do 35st? w garze, zadanie Lacto, ok 1 kapsułka na 1litr.
Owinąć spiworem, kocem, kurtką i zostawić na 22-24h to zakwaszenia.
Po tym czasie normalnie zagotować + chmielenie.
Burzliwa 10-14 dni?

Notes: Notes: Would not use wheat malt again, this left a haze I didn't appreciate and made it fall out of a guideline that I feel isn't a Kolsch.
Tasting Notes - 10-27-2014 - This is still a very young beer right now. Getting the banana/isoamyl acetate flavor off the head of the beer and only slightly off the palate. I used boifine on this to help clear it up will see how it works, as of now there is a haze. Very clean hops flavor and very light. Seems like a few tweaks and this is football season drinking beer.
More notes 2 days later; A few days drinking this I am getting grapefruit and fruit notes.

Tasting notes:
Gretchen does not like this beer.
I however think there is way to much rye in it and it tastes funny. The mouth feel is malt forward and low hop. The finish is not present, it has a strange sharp finish that isn't like other beers. |

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
