Note: This recipe is for a 6 gallon batch, with 5 gallons intended to remain after hop loss. To make this Pliny the Elder clone, mash grains at 151-152°F (66-67°C) for an hour or until starch conversion is complete. Mash out at 170°F (77°C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort to 67°F (19°C) and transfer to a fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67°F (19°C) until fermentation activity subsides, then rack to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then add the second set. Age five more days then bottle or keg.

Notes: This recipe was derived utilizing readily available / common grain bill and off the shelf yeast for the style. The hops utilized are not so typical for the style but I had them in STOCK after purchasing them by the pound at massive discount rates...hence the name and how the hop selection came about.
The water chemistry may be most overlooked piece of this beer and controversial element of this style. The water chemistry for this recipe was developed after recommendations from an award winning professional brewer who stated that their focus was on maintaining a 3:1 Chloride to Sulfate ratio. |

Notes: Add all salts at beginning of protein rest. Add lactic acid (2mL) at beginning of sacc rest. Boil for 15 minutes without hop additions to sterilize wort. Add lactic acid to wort to reach a pH of 4.7. Chill wort to 110 deg F. and pitch L. plantarum in kettle. Allow 24 - 48 hours for wort to sour, targeting a pH of 3.2. Follow the above boil schedule. Knockout at 65 deg F. and pitch WLP029.
We used a 50% pilsner and 50% white wheat for a balanced profile. We used Hallertau Mittelfruh because it is a low alpha acid noble hop. We used L. Plantarum to kettle sour the wort, this is a new and unique strain of bacteria for the both of us and we were curious about it. We used WLP029 as our yeast because it lends itself to the traditional flavor profile we were after.

Notes: Used Brulo's quick lager method on this. 45 degrees for 5-6 days, then bumping up to 68 over 3-4 days. Crash and gelatin fine. ready to drink in 14 days!
Last brewed on 09/25/21. Used 50 degrees for 5 days, then set to 68 and let it free rise and gelatin fine when done. |

Notes: Add 1 pound of sugar, 1/2 cup of water, and 1 1/4 tsp DAP. Bring this to a boil over medium heat until it hits the 290degF where I slowly stir in 3/4 cup of water, then dump it directly into the wort with 15 minutes left in the boil.
Candy sugar addition.
1.25 lbs sugar, 3/4 water, 1 1/2 tsp DAP for 1.25 candy sugar addition. |
