this time will be doing a 30 min all extract version bc i dont have a free weekend so ill have to do it at night after the baby goes to bed :-)
not having to do a 60 min warrior addition will allow me to add more hops by weight to the brew hopefully will get a better sense for if and what this hop tastes like in later additions.
also last time i did all maris otter malt. i still have some pretty cool labels i want to use again but they advertise smash with maris otter so i want to be a little honest. although im adding either some wheat malt or pale malt because the jug im ordering from northern brewer comes in 3.15 and 6 lb. denominations. i could do 9.15 lb which would be 7% but then its not really pale ale anymore. will do the 6 this time and see how it turns out. if i still cant tell wtf warrior and maris otter is after this then maybe will do 7% version next time.
going to reuse yeast which will be on its 3rd generation and just came off a mosaic ipa. hoping i can clean it well enough so theres not a lot of left over flavor, and also that it attenuates enough - it was questionable in the last brew although that was an old version of the 2nd generation. |

Notes: O.G. and hopping rate typical of English pale ales in the 1890's. At the time, bitter beer was generally lower-gravity, lighter-coloured, and less-hopped, with O.G.s ranging from 1.045 to 1.050. Pale ale tended to be stronger, slightly darker, and hoppier, with O.G.s closer to 1.057*.
Efficiency was lower with my last batch, I think because I used a thinner mash, and rushed the transfer while sparging. Going with a stiff mash to make a less fermentable, maltier beer - also has the benefit of faster conversion.
□ heat 5 gallons water to 180°F to preheat mash tun
□ heat 4-1/2 gallons strike water to 168° F
□ transfer 3-1/2 gallons strike water, add 15g gypsum
□ mash for 75 minutes, heat 6 gallons sparge water to 180 ° F
□ vorlauf, collect about 2 gallons of sweet wort
□ sparge, stir, rest, vorlauf, collect to near 5 gallons of sweet wort
□ sparge, stir, rest, vorlauf and collect to near 7 gallons [O.G. 1.040]
□ begin boil, add first hops for 60 minutes
□ add hops at 30 minutes
□ add yeast nutrient and Irish Moss with wort chiller and mash paddle at 15 minutes
□ add final hops at 10 minutes
□ turn off burner, chill wort to 77° F
□ remove wort chiller
□ drain half to fermenter (splash), shake, add yeast, drain rest to fermenter
□ ferment in insulated bag [with some frozen water bottles to start]

pre boil gravity was 1.070.
mash efficiency was around 70%
we used Pinner tap water. No chemistry additions (only 1 campden tablet).
First mash with cooler mash tun! mashed with 20L to the 8kg of grain. After an hour (just over), we started it draining and recirculated 2.5l and then quite quickly (after a couple of litres) added 5L of sparge water (around 75 degrees slowly over the top of the grain bed with some foil with holes in on top, i.e. a bit like continuous sparging.
Then around half way through we sparged with 2l (the grain bed looked dry before and then was saturatd after). And then finally 3l of 75 degree sparge water.
We collected 24 litres (from 30l in). Started the boil all together - MASSIVE hot break.
boiled for 90 mins. didn't lose as much liquid as we hoped.
used protofloc. Standard hop additions, cool down (chiller to 25 degrees) and transfer to fermenter (multiple trabsfer back and forth for oxygenation and then vigorous shaking).
Used 3 packs of mangrove jacks new world strong ale (M42), which rehydrated to fill the conical flask so we added some wort to empty it.
OG of 1.082
fermentation started within a few hours, was at 18 degrees, then up to 20 degrees by the following evening (24 hours from start)
