Notes: Before mashing: Half of 0.4 kg of Flaked Oats (0.2 kg) are lightly fried in the oven, just enough to fill the yellow shade and smell like cakes.
Fermentation: 24 days on 18°C in fermentor.
Priming: Pouring into bottles with 2,6 g table sugar / 0,5 l bottle.
Aging: in bottles for one month (you can tasting before, but our beer just became great after one month).
Black in color, great full body, thick like oil, subtle aromas, mild roasted grain aromas, light malty sweetness, medium fruitiness, low hop aroma, Moderate creamy, persistent tan with brown color. |

Mill the grains and mash at 149°F (65°C) for 60 minutes.
Run off into the kettle, sparging and topping up as necessary to get about 6.5 gallons (25 liters) of wort.
Boil for 90 minutes, adding hops according to the schedule.
After the boil, stir to create a vortex, add whirlpool hops, and allow 30 minutes to steep and settle.
Chill wort to about 75°F (24°C), aerate, and pitch the yeast blend.
Allow the fermentation temperature to free rise as warm as it likes.
When the beer is about 75 percent fermented (around 1.015–1.016), add the dry hops and sugar. Once fermentation is complete and gravity is stable, package and carbonate to about 3 volumes.

Was done as a concentrated boil (13 Gallons) and diluted to strength.
Plan is currently that we will secondary the beers on top of oak for 3 weeks. The 1318 Batch by Rich will be racked onto French Oak Beans soaked in Scotch Ruby Port and Vodka. The WLP025 Batch by Drew will be racked onto Oregon Oak Beans soaked in Sherry and Vodka. The soaking process protects against infection and adds character to the beer. |

Notes: A tricky one... First of all, this is a malt-forward beer for sure. As such, it relies on a huge, complex malt bill riddled with adjuncts, and as such, the diastatic power is low. Mash this one for 90 minutes for sure, and be sure to perform the iodine test. Also, because it's so dark, be sure to check pH. Albany NY tap water is world renown for brewing, and has a pH of about 7.6, so I already lean alkaline. Your mileage may vary, and may require bicarbonate addition to hit the ideal target of 5.4 - 5.45 for the mash.
That said... the real magic is in the peanut flavoring. Given that I prefer to do things the hard way, and avoid extracts and shoddy products, we're going to go old school alchemist on this one. Boogie on down to Whole Foods, and scoop up 1 pound of dry roasted peanuts from their peanut butter area. DON'T grind them. Instead, bring them home, and beat the living shit out of them in your food processor. You want basically as close to dust or fine gravel as you can get. Snatch some Everclear from the liquor store, place the nut dust in a mason jar (large), and cover with the Everclear, leaving at least an inch, no more than two over the top of the nuts. This is your baby; be sure to rock the baby once a day for... FOUR WEEKS. Yes, this is a commitment. But it's so much better than extract that sat on a shelf, and PB2 powder. For the last week, store this beast in the freezer. Each day, scoop the fat and scum off the top as best you can. When 4 weeks is up, use a coarse sieve to strain off the grain alcohol from the nuts; discard the nuts. Then, use coffee filters several times, passing the grain alcohol through until clear. This... is your peanut bomb. You should have about a cup left; toss into the keg and enjoy. |

Notes: Steep grain packs for 20-30 mins in 1.5l of hot tap water
Strain into large pot and rinse with 1l of hot tap water, discard the grain
Add 4 l of water and 1kg of the Light LME, bring to the boil while stirring
Add 30g of Hellertau hops (or Styrian)
With 10mins to go on the boil, add the Whirfloc. (Can be omitted)
Turn of the heat after 60mins
Add the rest of the malts and Candy Sugar and 4g of nutrient (but not the Dextrose) stir until dissolved
Place in a sink of cool water and wait for 10-15 mins
Pour the contents of the saucepan into the fermenter and top up to 23l with chilled water
Stir vigorously to aerate
Add the yeast when the liquid is around 20 degrees C
On day 4 of fermentation add the Dextrose. |

Notes: @nd edition of the maple sap ipa. Boiled 3 gal of sap and let cool outside overnight. Boiled 3.5 gal and followed recipe. OG was around 1.074. Only concerns are that the sap had a bit of an off smell while boiling until I added the malt. Smelled and tasted good and bitter. Should be around 8% ABV. IBU will be much less than shown here. Date was 3/1/16 at 6:30 started to add malt. Ended cleaning at 8:30. |
