Notes: Yummy! Extra hoppy, which is fine, was thinking as good as the previous year's Honey Pale Ale was, it was a bit on the low side for hop flavor.
This batch is more assertive in the hops, nice golden color. OG and FG were within a hundredth of a point of predicted...WOOHOO!!
The Safale S-04 generated an interesting yeast cake on the bottom of the fermenting bucket. It was thick and more solid than any other I can remember, and it looked almost like a pancake with a spongy (pock-marked) appearance. It stayed intact for the longest time during the bottling process.
Fermented for 14 days at 71° the entire time, in a 6.5 gal plastic bucket. OG was 1.073 and FG was 1.017 for 7.35% calculated ABV. Right on target! This was the first time I tried bottling with shrink-wrap labels and they worked beautifully. |

Notes: First Brewed 06/2012
Hopped beyond the point at which IBUs are measurable, only the most hardened palate will get beyond Jack Hammer's intensely resinous pithy bitterness and to the grapefruit, orange zest and dry biscuity malt beyond. You could brew this with less hops, but really, why would you bother? Be aware that this is probably the hoppiest beer you will ever make. Make sure you use fresh hops, for a massive fresh grapefruit hit. Have everything else in your store cupboard, and buy your hops last, as close to brew day as possible!

Notes: I made this a few weeks ago and am about to bottle. It tastes great so far, but will definitely benefit from carbonation. It ended up being a darker brown color and you can taste the elderberry flavor, but it's not overpowering.
The OG ended up being 1.070, and the FG 1.012 -- likely from the sugars in the dried elderberries. (I used a package of dried elderberries from Brewer's Best).
I'd recommend using a bag, basket, or strainer of some sort to hold the elderberries, then pull them out before transferring out of the brew pot. Elderberries kept getting caught in the siphon during my transfer. |

Notes: "Crystal malt" is malted buckwheat.
It was prepared by wetting the buckwheat groats (purchased form a co-op health food store) grain in strainer for approximately 2 days, rinsing about every 8-12 hours, until the rootlets/sprouts are about slightly shorter than the length of the groat. This keeps the grains moist, and also rinses away any molds that may also be growing.
I air dried the groats on a cookie sheet for a day before oven drying at "warm" heat for 6-8 hours, then increasing heat to 250 for 2-4 hours to caramelize the sugars in the dried groats.
They taste mildly sweet, like grape-nuts cereal, and have the same texture. |
