Notes: Bring 1 gallon filtered or bottled water to boil
Add 1 lb DME and stir until dissolved and foam is gone
Add hops
Boil 20 minutes total, adding LME in last 2 minutes - turn up heat while adding LME to maintain boiling temperature and stir well to avoid scorching.
Turn off heat after 20 minute boil and cool with 1.625 gallons (6.5 quarts) of chilled filtered or bottled water (in LBK).
Continue cooling in fridge until wort temp is 65-67 degrees.
Pitch 1 Packet S-04 yeast.
Ferment 1 week maintaining ambient temperature of 65 degrees.
Check gravity on day 6 and day 7 to ensure FG is reached.
If fermentation is done and yeast is clearing at 1 week, either place in fridge to cold crash overnight or leave 2-3 more days to compact yeast.
Carefully transfer to bottling bucket and prime with preferred method.
Maintain 72+ degree temperature for bottles during carb and within one week they should be fully carbed.

Notes: 3/2/15: Brew day.
Steeped specialty grains for 20 minutes in 2.5 gallons of distilled water, starting at 154ºF. Turned off the burner. After 10 minutes, the temperature dropped to 144ºF, so we relit the burner and it hit 152ºF by the time we removed the grains. We let them drip until only one drop per second fell.
Added 3 gallons of distilled water and 20 ounces of light DME. Let temperature rise to 175ºF and added ~5 more ounces of light DME.
Once the water boiled, we added 6 pounds of light LME, which we had let sit out of the fridge for 36 hours and had soaked in hot water for 10 minutes. Added 1 ounce US Fuggles pellets loosely contained in a hop sock. Boiled for 70 minutes, since the addition of the (non-active) immersion chiller stopped the boil for 7 of the last 10 minutes of the original 60. At 10 minutes, added 1 tablet WhirlFloc.
Chilled to 75ºF using immersion chiller, aerated for 20 seconds, and added solid stopper. Gravity of 1.058. Transported 25 miles in a car.
Aerated for another 20 seconds and pitched a smack pack of Roeselare, as well as the bottle dregs from Hanssens Artisanaal Oude Kriek, Boon Oude Geuze Mariage Parfait, and Tilquin's Oude (Gueuze Tilquin)².
Installed blowoff tube and left in closet to ferment at ambient temperature of 66ºF.
24 hours later fermenting vigorously. Internal temperature 74-75ºF, ambient temperature has gone up to 68ºF after 2 days.
3/6/15: Fermentation has slowed significantly, temperature has dropped down to 72ºF, and blowoff activity has been reduced to every 3 seconds.
3/26/15: Racked to secondary. Quite clear, with a mildly tart, fruity aroma. Washed 1.5 quarts of yeast slurry for use in a future batch.
4/19/15: Added 1 ounce of Burgundy-soaked oak cubes.
10/29/15: Pulled a sample. Gravity 1.006. It smells like the rubber stopper, which I replaced with a silicone one. (Note to self: Never age something long-term with one of those again!) Body was medium, with a slightly higher carbonation level and (perceived?) acidity level than my other sour. Minimal funk, slight fruit; somewhat boring. This one will probably get some fruit to liven things up if the acidity doesn't increase. |

Notes: The original version used buckwheat honey and the flavor didn't end up coming through at all so I'm not going to keep using it.
The last one used all MO for the base malt and it came out too bready. In the next one I'm going to split the base malt between MO and Golden Promise. That might reduce the breadiness some. People have reviewed Golden Promise as tasting a little more sweet and a little less bready so hopefully that change will get me where I'm hoping to be.
I didn't really taste or smell the typical English Yeast character so I'm going to use Windsor and Nottingham in the next one. Try to get some ester production out of Windsor before I pitch Nottingham in there to dry it out some.
Adding special b and pale chocolate should darken it and add some interesting flavor. I use that combo in my dark mild and I really like it a lot in that beer, hopefully it has the same affect in a barleywine.
I plan on skipping the simple sugars in the next one. I'm finding that over 11% abv is just not pleasant for me to drink. I can get between 10 and 11 on my gear so there's no reason to add the sugar to push it higher than that. It works better in a belgian quad or RIS, but I don't think it adds anything to an english barleywine. It's not supposed to be an aggressive beer, but a satisfying and comforting beer to drink by the fire when it's cold.
I might separate some of it out after fermentation to experiment some spices/oak/fruit etc...

Notes: Starter used 1/2 package of dry to build up to 150B cells. Used 80gm DME light in 750ml water. On stir plate for 18 hours.
Starter was prepared 2 days before brew date. Twelve hours before pitching the flask was refrigerated. At pitching 500ml was poured off, remained mixed to suspend yeast, then poured into aerated wort.
Sparge water is distilled.
Need for protein rest is 50:50. Last batch incorporated 10 min and result was excellent. Changing malts and hops and lightening up the water this time, so perhaps the P-rest should stay.
Ok, at last minute decided to do 3 rests at 122F for 10, 140F for 10 and 153F for 45.
Substituted Carahell as I was out of Crystal 10 malt. |
