Notes: Mashed at 150 biab may 30 for 1 hour, let sit overnight, hops were added via hop spider, pitched half a pack of hornindal kveik at 100F on may 31,
Kept in garage with heat belt , temp past 86 max on fermometer strip. Dry hopped w/ nylon paint bag Jun 3, bottled June 8, squeezed paint bag and added 4.6 oz cane sugar, actually yielded 5 gallons. Put in garage next morning.

Put 2.5 lb pureed rasperries. not strained, into boil at end with 15 minutes left.
Puree 5lb frozen fruit chunks, strain and heat at ~170 F for 5-10 min prior to adding to fermenter. This will denature the papain enzyme that can digest proteins and ruin head retention.
*Fruit is all raspberry.
Add first round dry hops at high krausen, next batch few days later for few days with raspberries and fruit.
Increase chloride levels in water with gypsum.
steep grains around 155? a little higher?

Snow Goose from the Wild Goose Brewing Co. on Maryland’s Eastern Shore is one of my all-time favorites. This annual winter treat always finds me stashing away plenty for summer. However, no more stashing is required as evidenced below! If I owned a brewpub, this would be my house beer.

Ingredients:
10 lbs. pale ale malt
1 lb. crystal malt, 60° Lovibond
0.25 lb. chocolate malt
0.25 lb. roasted barley
1 lb. malted wheat
1.5 oz. Cascade hops (6% alpha acid), 1 oz. for 60 min., 0.5 oz. for dryhopping
1 oz. Fuggle hops (6% alpha acid), 0.5 oz. for 45 min., 0.5 oz. for 30 min.
1 oz. Goldings hops (5% alpha acid), to steep
Wyeast 1318 (London Ale III)
Step by Step
Add grains to 4 gal. of water at 168° F for mash temperature of 154° F. Sparge and collect 6 gal. wort. Boil 15 min., then add 1 oz. Cascade. Boil 15 min. more, then add 0.5 oz. Fuggles. Boil 15 min. more, then add another 0.5 oz. Fuggles. Boil for 30 min. more for a total boil of 75 min. Turn off heat and steep 1 oz. Goldings hops for 10-20 min. Chill, aerate, and pitch yeast.
Ferment in primary at 64°-74° F for four to eight days and rack to secondary for seven to 10 days. Bottle or keg as usual. |

Notes: This is a relatively simple blond ale recipe very similar to a Slovenian blond, but with one small twist: use chips from broken bat, along with some standard maple chips. The chips, and/or tea made from them, should be added after primary fermentation has ended. Rinse wood chips to remove excess debris, then place in microwave-safe container, add water to cover the chips, then add lemon juice and zest and boil to sanitize. Allow this to sit for 10-15 to create a tea, then add entire mix to fermenter. |

Notes: Toasted the barley for 20 mins to give a cookie flavor.
Finishing gravity was at 1.021 after coming back from my Xmas vacation. 2 weeks fermentation in total.
Primed 2.7 gallons with 1.6 oz dextrose. Leave for two to three weeks to carbonate.
Totally fantastic stout. Better than I could have expected. The cookie flavour runs through the beer and it has a smooth silky texture. It's probably the best beer I've made. |
