8-25-13: 71% BHE. OG: 1.06 @ 5 gallons. Going to rack onto peaches. I boiled for about 15min before starting the 1hr timer. For some stupid reason. Now I'm exactly at 5gal with 1lt starter added. Note to self: If you have about 6 gallons at flameout, that's GOOD.

Notes: The original Recipe calls for 4.75lb's of each malt however I upped it to 5lb's each since it'll be cheaper at my LHBS. A bit more ABV but that's never a bad thing.
4/15/19 10ml of Lemonade concentrate added to a pint is the equivalent of one 12oz can of lemonade concentrate for 5 gallons. Going to try it when making a wheat ale. |

"Dry hop" with 2-3oz of wheat malt to inoculate wort with Lacto for proper taste profile.
Use clean finishing Yeast
Bring fermentation up to 66-67 degrees for about 3 weeks.
Bottle around 2 volumes CO2 to make sure there are no bottle bombs. Once carbonated, drink quickly. |

Notes: Add 2 tsp of Gypsum to water, based off starting with DC water.
The recipe released from the White House has an error, they mention 1.5 oz of Fuggle in the list of ingredients, but then only 0.5 oz in the instructions. I went with 1.5 oz here.
The instructions are also a little weird in terms of the boil times. They say 'add the honey and boil for 5 more minutes'. So, actually it is a 50 minute boil, not a 45 minute boil.
Other than that, it is a straight forward extract batch.
To get it to qualify as an Amber Ale, had to set the IBU equation to Rager, and the SRM equation to Daniels. I'm open to suggestions on the style (haven't tasted it). |

Notes: Our OG was 1062 and FG came out to 1012 giving the beer a nice 6.6% abv. Used freshly grounded coriander and freshly grated orange peel. Dry hopped with 1.5oz Citra pellets. A great Summer APA. |

Notes:
Strike with 9 gallons at 160 to hit 145. Raise through Herms to 155 after 45 minutes. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 11 gallons at 165-170
Safeale 04 (wyeast 007) fermented out three generations in. Yeast has a good clean ale flavor. Made a 2 liter starter two days before brew day 1-21-12.
Pitch yeast at 65. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 65. Raise to 70 degrees after a few days to clear diactyle.
Add a Brett C culture in secondary after building it up via starter. Adds a nice leathery/citrus/pineapple complex flavor. Dry's the beer out substantially and really adds a huge amount of complexity. Drying the beer out helps substantially in the finish.

This brew close to Graham Wheeler recipe for relatively low-alcohol best bitter from Black Sheep. Followed recipe quite closely, upping Challenger hop dose from 21g to 25g to compensate for relatively low AA content. Otherwise identical.
Noticed during mash that Braumeister 'fly sparge' was uneven, showing preferred channels through the grain pipe. Not seen this before and wondered if the thinner mash was responsible (at 5.85L/kg, it was significantly thinner than we usually do, with a target of ABV 3.8%).
Measured OG after mash at 1.040, indicating 65% efficiency despite uneven flow through malt pipe. Volume into fermenter was 20L and OG 1.042, projected ABV 4.0%.
Fermentation set-point 19C, actual T will be close to 19.5C.
FG 1.006 - adjusted attenuation to 83%. |
