Fermentation started at 69 degrees. Raised to 71 degrees after 72 hours in the fermenter, 73 after another 2 days, then finally 75 after 2 more days (beer was approaching FG). Came out well but a touch sweet at first. Improved significantly with age, and dramatically much later -- wish I had hung on to more of it rather than drinking through it young. I'm having the last bottle right now (1/19/25) more than year after packaging and it's actually incredible at this point -- rich and concentrated with notes of figs, plums, raisin, caramel, cherry liqueur, and leather. Still a bit sweet but the complexity feels like it needs the sweetness to stick to. Kinda stellar at this age, but I would rate it merely good at least than 6 months' age.
