Notes: I find dry hopping rates to be ABV-dependent. For instance, if brewing a 4–5% session beer, we have definitely found that “double dry hopping” or even dry hopping over 3 lbs./bbl (1.5 oz. per gallon/11 g per L) can l undesirable green and vegetal flavors that are extremely difficult to tame even after extended conditioning time in the tank

Notes: 1. Steep grain in 1.5 gallons of water by heating slowly to 155, then shut off the heat steep for 30 minutes.
2. Remove grain from wort.
3. Add the fermentables along with 1/2 the Fuggles & 1/2 the golden hops and continue boil for another 30 minutes.
4. Add Irish Moss continue Rolling boil for 15minutes.
5. Add 1/2 the Fuggles & 1/2 the golden hops and continue boil for another 15 minutes.
6. Add Irish Moss and continue boil for another 15 minutes.
7. Cool the wort down as quickly as possible (I placed the pan (with lid on) in the sink, filled around the pan with ice and cold tap water. Being careful not to allow the ice or water to touch the lid, don't want to contaminate it now).
8. Pitch the yeast in 1/2 cup water & a couple tablespoons of corn sugar just to make sure its going to work. (I used Karo Syrup, didn't' t have dry corn sugar handy)
9. Pour wort into fermenter, use a strainer if you have one to catch the hops.
10. Fill with water (total wort plus water = 5 gallons)
11. Now is the time to get a sample to measure.
12. Pitch the yeast into the fermentor and stir vigorously for a minute or so to infuse with oxygen.
*Step 4 was a mistake. Shouldn't have done it. |

Notes: 1.046-1.048 adjusted boil gravity? damn - not sure what was wrong cuz that and OG don't line up
chilled to 68 ish with immersion. Got to 90-95 in 10 minutes, then 20 minutes more to get to 68.
had great break with chilling, but upon transfer most of the break got in anwyay. wort was super clear in kettle and muddy in fermenter, then within minutes the trub/hops started to settle at bottom of better bottle 3 gal fermenter
pitched dry s-04 pack, sprinkled in gradually, gently rocked fermenter to rehydrate slowly ish
last oz of mosaic hops was added right after turning off the burner. Did a 'whirlpool' where I stirred a whirlpool vigorously for about 2 minutes with my paddle. then started chilling immediately
1.015-1.016 FG - tasted damn good out of fermenter
added 1/4 tsp gelatin - splashed beer slightly pouring it in
catbed on 10 psi
Beer was not crystal clear - a bit hazy but not crazy.
Tasted good but nto great. I would guess overly sweet from too much crystal and not enough bitterness? Still drank it like creamed corn but could be improved upon.
maybe halfway through keg and now I think this beer is pretty fucking good. Like damn.
