## Fermentables
- 4lbs Cane Sugar
- 1 tbsp. Molasses
## Yeast
- Safale - American Ale Yeast US-05
- 1 tsp. Yeast Nutrient
## Steps
- Brew Day
- Bring 4lbs of sugar and 1 tbsp. Molasses and water to a boil for 15 minutes
- At Flame out, add yeast nutrient
- Once cooled to approx. 70 degrees F, pitch yeast
- After Fermentation
- Cold crash if you wish to clear the beer
- Transfer clear finished beer to keg or bottling bucket and add in 4 oz. of GNOME Root Beer extract
- Add 2lbs more of Cane Sugar to back sweeten (dissolve in 1 qt. of water)
- Add 2-4 tsp. of baking soda to taste
- Bottle or if kegging, aim for 2.4-2.7 volumes of CO2 |

Notes: 1. Mill your adjunct to the same degree of fineness as you mill the malted barley for your main mash, or slightly finer.
2. Add 1.25 of Crushed 6-row to 3 pounds of raw wheat
3. Add 10.5 quarts and heat to 156 and dough in until you hit the starch gelatinization temperature of 136-147. Hold the cereal mash at this temperature for about 20 minutes.
4. After the 20 -minute rest, slowly heat the cereal mash to boiling, and allow it to boil for 30 minutes, just as if you were making oatmeal. Be sure to stir frequently to prevent scorching. This would be a good time to start heating the strike water for your main mash.

Notes: Our winter warmer came out really well last year, so we've decided to basically re-brew the recipe. This is our first re-brew since starting brewing in 2013, so we're pretty pumped to see how it'll come out on the new system.
1/30/16: I just wrote a bunch of stuff but it apparently decided not to save. Basically, we changed systems since we last made this. The beer itself has generally remained the same. It's a little thinner and less spicy. Still works really well. Smoke character has remained. Probably increase the cinnamon and nutmeg next time we make this. We'll probably make this every Winter because it's so dialed-in. Good stuff that needs very few fixes to be excellent. Proud of it. |
