Notes: Single-infusion mash at 151° F (66° C) for 45 minutes.
Draw 6 gallons and boil 60 minutes. Chill to 68° F (20° C) if possible.
Whirlpool and allow 15 minutes to settle before racking to fermenter.
After primary fermentation, rack onto pureed mangos. (Mangos change flavor as they age so it’s important to get them from the same tree or source whenever possible. Overripe mangos make for a somewhat putrid final product. Their sweetness also varies depending on the exact type of mango-some are sweeter than others.)
In seperate muslin bag, add hibiscus and a couple of sanitized marbles for weight. Suspend bag from a string so it can be easily removed after three days (or longer if a spicier beer is desired).
Ferment in secondary for three weeks. If possible, cold crash at around 45° F (7° C) for a couple of days to drop sediment.
Transfer through muslin bag or another filter into keg or bottling bucket.
Carbonate to 2.5 volumes or prime and bottle.
Extract Version
Substitute 5.5 lb (2.5 kg) pale liquid malt extract for the two-row malt and 0.5 lb (227 kg) liquid Munich malt extract for the Munich malt.
Steep crystal malt in 158° F (70° C) water for 30 minutes, strain, add malt extracts, bring to a boil, and proceed with the recipe as written.
Note: the actual color of the beer will have more of pink hue from the hibiscus, as opposed to the golden color in the image.

Weihenstephan Hefe Weissbier
38l water treated with 1 x campden tablet and 10ml lactic acid and 9ml AMS.
Carry out alkalinity and calcium test for further info
Alkalinity 6.4 = 86ppm so a bit high
Calcium test 7.50 = 125ppm so pretty good
Dough in at 40, 20 min rest at 43 degrees
Add 1.5l water mash at 67 for 50
Add 1.5l water mash at 72 for 5 mins
Mash at 77 for 5 mins
No protofloc
At start of boil appeared to be approx 33litres of wort took gravity reading and it was 1.033!!
Decided to switch to a 2 hour boil to increase the gravity so reduced wort to approx 25 litres
cooled to 21 degrees and whirlpooled, managed to squeeze 20l of wort into the fermenter
OG now 1.052
Pitched yeast, (nutrient sachet hadn't dispersed into yeast properly as it was folded over)
Placed into fermentation chamber @ 18.5 degrees
Ferment at 18.5 for 3 days then 20 degrees for 2 days, 21 for 2 days
After 8 days checked gravity and it was 1.011
Racked into keg with 150g brewing sugar ready to be bottled.
ABV 5.4%
After 36 hours in keg transferred to 27 x bottles
Placed in conditioning chamber @ 18 degrees
Would probably go for 35 litres water only next time as ended up with too much wort after mash.

Notes: Fermented 7 days 20c It took 4 days for the yeast to get the gravity down to 1.014 (bottled at 1.014 after 7 day of rest in the secondary)
racked to secondary and let rest for 7 days at 18c
Carbonated with 6g of table sugar pr litre of beer.
After about one month on bottles it tastes delicious. Its a sweet beer that has a mild hint of chocolate on the pallet.You can also taste a little "woodyness" from the NB hops I guess this will come more with ageing since I used a bit more hops than I normaly would do on this kind of beer.
