Interstellar is a Red Rye IPA with spicy rye flavours from the malt and with great all-round spicy, fruity and earthy hop aromas from the use of Willamette and Amarillo. Be careful with the rye malt in the run off. It can lead to stuck mashes and extended collection periods.

| Notes: Mash at 150 degrees for 60 min. Mash out at 170 degrees for 10 minutes. Collect 6.5 gallons. Boil for 60 minutes total to eliminate DMS. Add hops as described. Chill to 50° F. Oxygenate with pure oxygen for 3 minutes at 1 L/minute and pitch decanted starter. Add honey on day three. Using Tasty’s fermentation schedule as a guide, let free rise to 52° F and rest for 4-5 days. Then raise to 58° F for 2-3 days; then raise to 62° F for 2-3 days. Once terminal gravity is reached, slowly chill to 34° F by dropping the temperature 2-3° F per day. Keg and lager for 3 months, but taste along the way because that’s just too long to wait. |

Scottish chocolate breakfast Stout - brewed with Brazilian Sertão coffee, Venezuelan cacao and (for the Scottish element) oatmeal. Smooth, chocolately and rich, with a honeycomb mouthfeel and a rich red berry coffee character. Brewed with our beer blogger friends from The Beer Cast and Hopzine. Steep the cocoa nibs and chocolate in the hot wort for a short period for the best extraction of flavour compounds.

Notes: Sugar is added 5 minutes until flameout directly to the boil
1/2 minerals added at mash the other half added during the boil after sparging.
Ferment at 64 then let naturally rise into mid to high 70's to finish. Add oak once most of ferment is done before racking for 5 days.
Total water needed is 20 gallons. Mash strike temp is 9 gallons at 130. Sparge at 170 with the other 11 gallons Use Herms to keep mash range at 145 for 45 minutes then raise up to 150 for 15 minutes.
