Notes: My homebrew shop was out of the regular American Ale so I used American Ale II and I was happy with the results.
For the orange I just sanitized the orange, took the skin off to get me 1 oz and threw it in with my Irish Moss.
It sat in my primary then I siphoned to condition for three weeks.
Kegged it at 8.2 and after 5 days it tastes great! It's a little more pale than a typical American IPA, but it's very drinkable--which is what I was going for. |

I would not really recommend this grain bill, it was more of an experiment, as it has pretty much every beer malt that Admiral Maltings makes.
Hops in this first case are ones I’m clearing out, they’ve been opened before, stored between 2-38F, and are between 6 and 12 months old. I’m going to guess they’ve lost about a third of their AA, which is definitely an estimate, and for calculation sake, will be putting all galaxy and el do hop varieties at 10% AA and Strata at 12%AA as it’s fresher(All 3 being originally between 15.4 and 16.0, so very close to each other).
The “10 day” dry hop is gonna be co-pitched with the yeast as a trial, didn’t know exactly how to list it, maybe it’s a whirlpool hop stand at 66 F lol. The 3 day is a normal dry hop at the tail end of fermentation. |

Notes: 2 Ziarenka Tonki na 18l, zalane bourbonem na tydzien.
Ziarna kakaowca ok 0,5kg podpieczone 10-12min w piekarniku. Laktozy ok 0.2-0.3kg(Słabo odfermentowało, więc poszło mało laktozy).
Laktoza dodana przy rozlewie.
Drożdze FM52 gęstwa, ale US-05 tez by sie nadały.
Świetna faktura, gęste, oleiste, słodkie. Troche sie moze ułożyc. |

This hop variety is available to the public for the very first time ever! Everyone at YVH was so excited when it arrived that we tore it open and breathed deep. The aroma is alive with tropical fruits and citrus, but pluots, peaches, and plums seem to be the big descriptors. We made both hot and cold teas and found that the hot tea leaned more towards a grapefruit aroma while the cold tea had darker fruits like plums and blueberries. I think we are going to try brewing a hoppy Saison with it and try to emphasize the stone fruit flavors.

This is an IBU kicked version of the first of this namesake. Lower SRM, less crystal to dry it up a little and higher IBU. :)
Still a 60 min boil, but no hop addition till 30 min. Takes a little more hops to get the IBU youre after but preserves more hop flavor. Been experimenting last few batches like this. I like the result.

Notes: Once the primary fermentation of your beer is complete, sanitize your secondary fermentation vessel.
Slice the vanilla beans lengthwise and open them up.
Scrape the tar-like interior of the vanilla bean out of the husk and put it and the husk into the bottom of the secondary fermenter.
Rack the beer on top of the vanilla beans before placing the lid and airlock on the secondary fermenter.
Wait 2-4 weeks for the vanilla to extract into the beer. Sampling periodically is fun, but not strictly necessary, as it will be difficult to get too much vanilla in the beer. (This is my opinion, but it might just be because I love vanilla)
