Notes: I think I'll add cooked cherries to 2ndary then rack over them from primary.
For the roasted grains, I used 3 times the recipe weight above, and cold-steeped in water for 24 hrs using 1 gallon per 3 lbs of grain (just used 2 gal for this batch)
When doing this and on brew day go to the mash calc page and adjust the weight of the grain in the mash down to roasted grains taken out to get water volumes

Learned nibs primarily impart nose so doing 2oz cocoa powder in the boil at 15 min and 2 oz nibs. 2-4 nibs in the 2ndary with the cherries
Low mash temp which perplexes me since the numbers were on. Doing a 1.5G decoction 30 minutes in to the mash |

remove .5L to second pot and heat to 82C

raise 2nd pot to 85C and return to main pot
= 4.1L @ 77C
sparge with 10L of 88C water
boil for 3 hours with aged hops - top up with water to make 12L
pitch sour beer slurry @ 20C - ferment for a year
? 1/2 straight lambic for later blending into oude gueuze

Notes: Water filtered through a carbon 5 micron filter numerous times. Starting pH 6.89
3g Calcium Chloride Anhydrous added to aid amylase in starch conversion.
pH adjusted to 5.5 using (pool acid) HCl.
Carscade hops home grown in Mount Macedon Vic Australia.
SG 1044 or 1042 Tilt and or Hydrometer.
I am trying to make a pale beer in the style of Corona with a well balanced but obvious new world American hop flavor. Not lawnmower beer more like beer you might have on the beach after a good surf watching the sun go down. ABV 4.5 IBU 22
Starter temp should be 25C for about 4 hours to get a better lift off
I used Wheatbix a supermarket cereal for the wheat component.

Notes: Flavor balance between fruit and spice in this beer is good, neither the ginger, nor the peach is overpowering.
I used frozen peaches, thawed before adding to boil. I once added to secondary, and peach flavor was too strong. |

- Reduseres til 11 grader nå en ser at gjæring har startet.

Notes: Brew Day:
- Grains were all run through the mill at my LHBS 3 times, as I could not adjust the setting. Still not sure how well milled they were.
- Added ~1g too much gypsum; reflected in the recipe, will fix next time.
- Citric acid was added by way of ~1.5oz lemon juice (juice of one lemon)
- Mash was held at 150 for 90 min for the alpha amylase, then lowered to and held at 140 for another 90 min for the glucoamylase. Conversion was achieved, as indicated by an iodine test.
- Sweet Wort Gravity: 1.024
- Used a new hop bag, and as a result some of the pellets clumped and probably didn't properly seep into the wort during boil.
- OG: 1.048: the Apple Juice was slightly sweeter than the recipe indicates. |

This American style Black IPA, also known as Cascadian Dark Ale, balances moderate roast character with medium-high hop bitterness. Briess Special Dark extract, Victory® and 80L provide a moderate degree of caramel malt character. The distinct citrus, grapefruit and slight pine characteristics of the hops complement
the roasted malt flavor and aroma of this Black IPA creating all the attributes you would expect in an American Style IPA. |
