Add to secondary fermentation after 5 - 7 days. Add put dry hops in a steralized hop bag and drop into your secondary fermenter, bump up your temperature to 20ºC (68ºF) and let it soak in the flavoures and clean up until the FG is stabile (about one more week).
*Optional*
Cold crash beer until it is below 10°C (50°F) and add gelatin solution. Continue cold crash to 0°C (32°F) and let sit for about 32 hours. |

| Notes: I have been fooling around with Vienna as an addition to Pale malt and Maris Otter for lighter ales for a while now and decided to make a pale ale with 100% Vienna as base malt. I couldn't resist adding some specialty malt and other adjuncts but the delicious Vienna should shine through. |

Notes: Trying to replicate the super-delicious Insubordination Pale Ale from Elysian Brewing Co. Described as using Chinook and Centennial for bittering then Simmcoe and Citra for finishing.
Gonna do a stir-plate starter with one smack pack of yeast. Get some dry yeast as a backup.
Have oxygen stone for aeration.
Initial boil volume should be just right for a 5.5 gal batch.
Had to substitute Amarillo for Citra. |

Notes: This is a quick kettle sour. It's ideal for anyone who doesn't want to risk "contaminating" their brewing equipment with bacteria.
Make up a lacto starter (*); I use Water Kiefer as the source.
Mash as normal and bring to the boil, then flameout immediately and allow to cool down 38 C. Pitch lacto starter and purge kettle headspace with CO2. Maintain temp. Sample every 12 hrs or so to monitor lacto progress. Once it's sour enough, bring the kettle back up to the boil and continue your brewing process as normal.
* Lactobacillus Starter Method
Combine the following ingredients to a liter of filtered water and boil for 15 minutes:
90 grams Dry Malt Extract
20 grams Dextrose (Glucose)
10 grams Calcium Carbonate (CaCO3 / chalk)
1 gram Yeast Nutrient or DAP (diammonium phosphate)
- Cool this starter solution down to around 38 C and add 100 ml of filtered water kefir.
- Seal the flask with a rubber stopper and airlock to prevent additional oxygen from entering the starter solution.
- Let it stand (covered) until pH reaches about 3.4 (5 days in my case), it will vary a lot depending on room temp.
- If you have a means of providing a temperature controlled environment, optimal growth is typically between 30 and 40 C. |

Notes: Modified an Kona Castaway clone All-Grain recipe for Extract plus steeping grain. The final specs for the brew closely match those of the All-Grain recipe, however I modified them to reduce the ABV to a more likable 5.6% vice the 6.4% ABV of the All-Grain recipe. Kona website says their Castaway is 6.0% ABV. Also added a bit of 60 L Crystal to the 20 L called for in the All-Grain recipe, to bring the SRM to 10. No comment re: SRM on the Kona site. Also, increased the fermentation volume to 6 gallons to net 5 gallons for bottling in view of dry hopping which always has a bunch of waste due to hop trub. The hops specified on the Kona site, were the ones I used. Adjusted boil volume to allow the hop quantities specified in the All-Grain recipe to hit the Kona-specified 50 IBU.
So, except for the lower ABV, this ought to taste a lot like Kona's Castaway. |
