Preparing Dried Chestnut Chips
1) With the flat side down, score chestnuts lengthwise along the round side that's facing up
2) Soak in water for at least 2 hours
3) Boil the chestnuts for 2 minutes
4) Transfer chestnuts to a towel lined bowl to pat them dry
5) Transfer hot chestnuts to a dry skillet already on high heat (chestnuts should be cut side up) and cover with a lid for 30 seconds. This will cause the chestnuts to open up along the score, making them easier to peel the skins off
6) Crumble the chestnuts into small pieces while they're still warm
7) Allow them to dry
Preparing Roasted Chestnut Chips
1) With the flat side down, score chestnuts lengthwise along the round side that's facing up
2) Soak in water for at least 2 hours
3) Transfer chestnuts to a towel lined bowl to pat them dry
4) Transfer to a baking tray with the cut side facing up
5) Roast in the oven at 350 F for 20 min
6) Increase heat to 425 F and continue roasting for 10-15 min
7) Transfer to a wet-towel lined bowl and completely wrap the chestnuts in the wet towel for 10-15 min
8) Remove from the bowl and remove the skins
9) Crumble the nuts into smaller pieces

TLDR; consider slightly bumping up the brown ale flavor contributors. Slightly more aroma and dry hops, bump up the carapils. Be sure to carbonate properly before bottling. Cant remember if chatgpt talked me out of the carapils because of the wheat and/or oats.
Scored 30 and bronze medal in MALT Turkeyshoot.
My opinion :
Overall I thought it was a great beer, kinda on the bitter side with piney pacific hops, I think you might want to keep it that way to fend off letting the brown ale base take over the flavor profile. This was the 2nd go round much better than the first. You still get the brown ale base character a lot kind of fading in and out as you drink. The bottles and cans were unfortunately undercarbonated. I think the head retention wasnt great either.

brewed last week, efficiency came out higher than expected. it could be because of two things. #1 I boiled / cooked the oats according to package. #2 when i went to add the boiled oats to the mash i was worried about raising the temp so i took a temp reading on the mash which i almost never do - thinking HLT is at 150 the mash would be at 150 or maybe slightly below - well the mash was actually at 155 even before adding the boiling oats. after tossing in the oats i had to add ice to bring it back down to 150. maybe the temp gauge in the HLT is off.
chat gpt is pointing out that the adjusted temp may influence the fermentability and thus the FG of the wort but not the efficiency here. at the same time, these oats were old fashioned rolled oats from kroger which shouldve been pre-steamed and ready to mash. but, unless there is something else going on, it seems the boiling did something

reformulating...reducing base malt and adding wheat and oats for more body. removing brown sugar altogether. thinking this beer should be a little more chewy.
on the hops side, the mt hood and warrior combo was a trash recipe to start. going for slightly toned down classic hop punch here. even though the body is now leaning more toward a brown hazy IPA, I don't want to go for the fruity route. using cascade and chinook for bittering flavoring and dry hop. added a little Amarillo for complexity but it could be dropped for just all cascade tbh.
dropped efficiency from 60 to 55 now that we have some flaked oats. projected for 7.35%abv but will be ok with at least 7.
the only other thing I didn't really address here is the dryness - this should be thicker body wise but nothing is adding any sweetness, besides removing the sugar and going all malt. lets go with this and see what happens....

* did i really use 3470 on this? whether or not i did, i def fermented at 68. i seem to remember original clone recipe called for ringwood ale yeast and i may have mapped that to 3470 rather than us05....?
i used a whole oz warrior rather than original 0.7. then used 2oz mt hood instead of 1. I just thought, if this is an ipa, it should have some hops. but maybe it just does not have enough body to support that
