Notes: We used hazelnut extract (2-1 oz. bottles) added to bottling bucket, and prime with corn sugar or DME as usual.
This seems to be way too much extract. (Bakto Flavors - Hazelnut Flavoring) The hazelnut finished seemed harsh. Use less next time.

Notes: do not add cane sugar / this was used to calculate the sugar in the apple juice (416 g per gal.) make sure to use a pure apple juice "read the label" no preservatives or you may kill your yeast.... and no added ascorbic acid this will throw off your acidity.
use molasses to prime @ 3/4 cup per 5.5 - 6 gal finish beer
first time brewed-did not like the molasses prime ( personal taste to much molasses flavor )
second time brewed - i used brown sugar and it was just the right amount of kick to the apple ...
it's a matter of taste if you like the bold molasses then go for it i preferred the brown sugar

Notes: This is a really great beer and the best I think I have made so far. The combination of malts add some complexity, body and flavour despite mashing at a fairly low temperature. There is loads of flavour/aroma from the hops. The yeast is also present providing some subtle fruity notes. Overall a very well balanced ale that I will definitely make again.

Notes: Clean and Sanitize everything then start!
Invert your sugar by:
Bringing one gallon filtered water or spring water to 180F/82.2C add 10lbs Cane sugar, 1.5 tsp/7.39ml citric acid and mix until dissolved then rest until clear not milky or continue to heat. Bring to boil and hold at 240F/115.6C for 45 minutes.
THEN:
Cool wort to 95F/35C. You can add (12oz/354.88ML frozen 100% no preservative orange juice to aid in reducing Temp) then add to fermenter when close to 95/35C. Add enough water to fermenter until 4.5/17.3L gallon mark is reached. Add 64oz/1.89L of 100% pasteurized lemon juice no preservatives. Aerate wort in fermenter. (I use a submersible hand held mixer that is sanitized) Once bubbles subside take gravity reading, Add yeast packet directly to wort. Airlock and ferment.
Add 16Oz/.47L lemon Juice on day two and the last 16oz/.47L 100% Pasteurized Lemon Juice (no additives) on day 3 of ferment or when you feel the ferment is ending.
(I don't like clarifying agents but there is always an option to make the brew clearer for you if you prefer more than time itself)
Rack and let clear for a week then..
Taste it!
You can back sweeten it here if needed. (I use erythritol then add priming sugar for bottle conditioning) bottle or keg as needed. Great summertime brew my father passed on to me that I have tweaked to modernized. |

Notes: This is a quick easy (DME) experiment using Meridian hops. I had a Meridian pale ale and was very surprised! Meridian gives a nice smooth juicy lemon flavor. Might scale it down to 2.5 to prevent blow off.
In the hop listing add .45 Citra & .45 Meridian at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 if sanitary for some IBUs. Otherwise this is a great Pale Ale too.
After fermentation (give it 2 weeks) dry hop with .60 Citra + .60 Meridian for another 3-5 days.
Transfer to secondary and cold crash (if you can) for a day or two before priming and bottling.
