Notes: 1. Prepare the Potatoes:
Peel and shred the potatoes. Boil them in about 1 quart of water until soft, then mash thoroughly. Allow them to cool slightly before adding to the mash.
2. Mash the Grains:
Heat 1.5 gallons of water to 152°F (67°C).
Add the crushed grains and mashed potatoes in a grain bag. Maintain the mash at 152°F for 60 minutes. Stir occasionally to ensure even conversion.
3. Sparge:
Rinse the grain and potato mixture with 1 gallon of water at 170°F (77°C) to extract sugars.
4. Boil:
Bring the wort to a boil. Add 0.3 oz of Fuggle hops at the start of the 60-minute boil.

Notes: *6 lb. DME and 2 lb. dextrose late addition (10 min boil)
*Starting fermenter volume was 6.5G w/addition of cooled (39F) distilled water (approx. 1.5G)
*Actual O.G. was 1.106 for entire fermenter volume (6.5G)
*Intense initial fermentation activity necessitated attachment of blow-off tube to Genesis 7G fermenter first 2 days
*Primary fermentation effectively completed in 7 days
*Very substantial trub even after first 2 days of krausen blow-off
*Transferred to secondary after 11 days for clarification; spent 8 days in secondary; significant clarification achieved (Ambient T throughout primary and secondary was 65F +/- 3F)
-Yield to secondary was approx. 5.2G due to losses from blow-off and sediment
-F.G. = 1.014
-Calculated ABV = 12.1%
*Bottled after secondary using 3g Lallemand CBC-1 bottle conditioning yeast, with 2t Fermax and 5.3oz. corn sugar; target = 2.7vol CO2

This recipe features 2 extract additions: The first addition will be at the beginning of the boil, and the second will be at flame-out (the end of the boilwhen the heat source is turned off).
1. Add 2.5 gallons of water to your 5-gallon brew kettle. This is known as your strike water.
2. Pour the specialty grains to your large muslin bag, and gently place them into the strike water. This is now called the mash.
3. Begin heating the mash to around 170ºF/76ºC. After you have
reached your target temperature, turn off the heat and let the grains steep for another 10-15 minutes. Remove the bag, allowing it to drain any excess into the kettle, and then dispose.
