100gm Pellet hops steeped for 1kg Fresh Hops steeped for 30 minutes at 75degrees.
2 x US-05 Yeast for 3 x S-23 Yeast
Ferment at 15 degrees for 3 days
Then 18 degrees for 4 days
2 days before fermenation is finished, drop pressure and add 100gms dry hops. |

Notes: Steep grain 25 min. @ 160 degrees. Remove steeping bag and throw out of the window.
Add malt.
A large hotbreak will occur
Bring to rolling boil; Add hops; boil 60 min.
Add allspice and orange zest at final 8 min. (52 min from start of oil)
Add 1/2 whirlfloc tab at last 5 min.
After boil throw all bags (orange zest, spices, and hops) out the window
Chill.
Start yeast 1/2 hour before end of boil; pitch at 65 degrees (max 70). |
