Notes: Second brewing of experimental usage of sour cherry concentrate. First was delicious but going for more. Hoping to achieve extra sweetness with addition of wheat, corn, and 2 hr boil. More complex sour flavors with Philly sour yeast. A couple week on toasted oak should add barrel aged taste.
*Cherry juice added in secondary. I included it with fermentable ingredients to calculate total gravity/ alcohol. |

| Notes: VERY dry upon finishing primary, spice somewhat overpowering. Improved with back sweetening and aging at least 2-3 months. Future batches will steep spices for 3-5 days in primary before removing and finishing fermentation. Will continue to backsweeten to highlight peach flavors OR increase peaches by 1-2 lbs. |
