Notes: 1. Värm 5 liter vatten till 50 grader och tillsätt vetemalt och pilsnermalt. Låt proteinvila i 15 minuter.
2. Värm vatten till 64 grader och låt vila i 60 minuter.
3. Låt malten rinna av i 10 minuter.
4. Tillsätt spraymalt samt mera färdigkokt vatten upp till 5,5 liter (från ca 3,5 liter)
5. Värm upp till kokning (i totalt 15 minuter)
6. Kyl vörten till 35 grader och justera ph:t med hjälp av Lactic Acid till 4,5.
7. Tillsätt lactobacillus probiotik drink.
8. Låt stå i 24 timmar (eller till önskad nivå av surhet)
9. Värm upp till kokning (totalt 60 minuter).
10. Tillsätt Huell Melon-humle vid 45 minuter kvar på kok.
11. Tillsätt salt, koriander, limeskal (så lite vit hinna som möjligt) och vitpeppar vid 10 minuter kvar på kok.
12. Kyl till 21 grader och tillsätt jäst.
13. Låt jäsa i 4-7 dygn.
14. Tärna, mixa (med så lite luft iblandat som möjligt) och pastörisera melonerna (76-77 grader). Rör om! Kyl!
15. Tillsätt melonen i ölet och låt stå i 3-5 dygn.
16. Flaska, kolsyra och drick!

4 gram Huell Melon-humle (Perle går också) (2,34)
2 gram salt (2,34)
5 gram korianderfrön (4,68)

ca 250-300 gram melon
1 paket Dusseldorf-jäst
ca 79 ml lactobacillus probiotic drink (typ en kvarts liter ”proviva” fattar jag det som)
Mjölksyra (6 ml men beroende på ph)
