Collect 13.5 gal at 160F, to hit 13.75 gal at boiling (0.98/0.96 = 0.98 density ratio at 160 F vs 212 F). Boil down to 12.25 gallons.
Fill Levels
Start : 13.5 gal = 3.25"
(13.75 gal = 2.95")
Finish : 12.25 gal = 4.6"
Pre-boil OG should be around 1.044 for a 76% extraction efficiency.
Start Vol = 13.25 (68F)
Stop Vol = 11.75 (68F)
Ratio = 1.13
Gravity= 44 * 1.13 = 49
Boil from 13.75 down to 12.25 gallons. It will shrink to 11.75 gal. Leaving behind 0.5 gal in the Whirlpool & 0.25 gal in the CFC will give 11 gallons total (5.5 gallons into each fermentor).
Pitch 775 Billion cells (for 11 gallons)
~800 mL of slurry (1B cell/mL, 50% yeast)
~200 gm of propagated yeast slurry
~409 gm of harvested yeast slurry (2B cells/gm)

Notes: The only tweaks needed on this great clone recipe is upping the toasted coconut to 1.5 lbs or maybe trying a high quality extract as the flavor faded fast after tapping the keg.
Also I added some oats for head retention. The oil in the coconut dissipates the head pretty quickly. |

Notes: Prepared a 500ml refresh starter with 70g of DME.
Added 13.5L of heated acidified strike water at 73C to mash tun for 66C infusion.
Added correct proportion of salts to the mash.
Mashed in and hit target temperature.
Refilled HLT and set HERMS to 69C. Took 30min to reach.
Turned on HERMS cycling slow to maintain mash at 66C for a further 30min.
After 60min of mash, increased HLT temperature to 79C whilst still cycling HERMS. This took 10min.
For 3min, sparged onto mash to build up head before starting vorlof.
Sparse & vorlof continued for 85min, when 30L of wort was collected in the BK.
Pre boil gravity = 9.5 bricks, 1.038 before adding sugar.
Added sugar.
Pre boil gravity = 12.9 bricks, 1.052 after adding sugar
Added correct proportion of salts to wort.
Boiled for 45min.
Added protofloc and yeast nutrient. Sanitized chiller.
At flameout added hops and whirlpools for 5min. Then dropped temp to 80C.
Continued to whirlpool for 20min then set up hopback.
Drained BK at 80C through hopback and plate chiller (slowly) to collect 21.5L of wort at 19C.
Took sample. OG = 15.1 bricks, 1.061. Spot on.
Pitched yeast then O2 wort at 1L/min for 90sec.
Put wort into fermenter fridge at 19.5 C.
