Notes: -2 2-liter yeast starters required.
-BOIL 90 Minutes!!
-Protein Rest 20 minutes with 135.3 water.
-Pull 5.5 Quarts of mash and heat to 212.
-Boil 22 minutes and add back to mash.
-Stir and mash for 90 minutes.
-Sparge and Mash Out as normal.
-Ferment 2 weeks at 55.
-Warm for 2-3 days.
-Lager for 6 weeks. |

| Notes: First batch turned out great! Nice body and very chocolaty. Gonna increase the roasted barley from 2 oz to 4. And back off the chocolate and C40 by 4 oz to 12 each and see if that is a little less sweet and more balanced. |

Adjusted the efficiency from 70% to 65% to equal the BG. Adjusted the Hop amounts slightly downward to get an estimated BU/GU of 1.64. Final volume in the fermentor was 3.0 gallons. |
