| Notes: Add crushed grains and 5 Star ph Stabilizer to 20 quarts of 128.4 degree water. Temperature should stabilize at 122. degrees. Hold for a 30 minute protein rest. Add 12 quarts of boiling water and heat if necessary to raise temperature to 152 for starch conversion and hold for 60 minutes. Mash out to 168 degrees and sparge to collect 8 gallons. Boil for 90 minutes and follow hop and ingredient schedule. Cool to 80 degrees and pitch yeast. After 1 week, transfer to secondary. After 2 weeks, Add raspberry flavoring and bottle or keg. |

Notes: Ok crazy experiment time, tried this at suggested mashed at 72 c !
Which I was not aware destroys efficiency ... expecting 70% got under 60%
High mash = lots of non fermentable sugars ...Yeast efficiency dropped from 70 ish % to 51% (Used London III)
Expected finishing gravity of 1.013 became 1.019
So 4.2 ish % brew became 2.7 %
Ok despite all of that... It tastes pretty good ! There is almost enough body and mouthfeel to convince you it's a tasty beer. Feels like it's 90% there .. It's kinda amazing really. At this low Abv , I had to drop my the second dry hop of 90g as it's already a bit thin, sharp and spritzy.
Next time with the numbers dialed in I'll aim for 3.5% Abv and drop the mash temp to maybe 70 c. Taste and see if it can handle a second round of dry hops.

Notes: Brew a light wort at OG:1.035/1.040.
At 4th day of fermentation pasteurize the honey heating it up to 65/70°C for 30 minutes. Let it cool down a little and chuck it into the fermenter...
Let it ferment and mature for another 14 days

Ps: with this honey addition (during fermentation) we want to enhance the flavor and smell of the honey in beer. |
