Notes: Mash at 150F. Kill the flame after the 90 min boil and add the Post Boil hops, swirl, cover and let sit for 60 min. After 60 min, drop the temp quickly, pitch and ferment at 70F for 17-21 days. Cold crash to 40F before racking to secondary. Rack to secondary, let the beer warm back to pitching temperature, and dry hop. I like to rack to a layer of CO2 covered hops (in this case, sack full of whole hops) in secondary. Add the corn sugar to a cup of water and boil for 5 minutes, chill and pitch when ready to bottle. Bottle at 70F
Hopefully this will be as funky as the song. |

Notes: This is a delicious recipe. I love this Witbier. However, the process was time consuming, and the yield was low. I will definitely brew this beer again. Perhaps the next time I may use a different mash schedule and see if I can step up the yield.
I initially used the multiple steps. I would like to see if I can make a similar beer with a single infusion mash. I am not sure if the raw oats and flaked wheat would need a different treatment. |

Original recipe uses Crystal 120L and Crystal 40L and dark munich. However, UK chocolate is apparently a lot darker so this is coming out the same colour.
Original recipe suggest 10ml per 473ml of beer and 2 vanilla pods for 7-14 days
If bottling 21L that is 444ml bourbon.
I think it might be a good idea chop and scrape the vanilla pods and soak in some of the bourbon (for sanitisation). Then add the whole lot to the primary. This is going to extract some flavour, so should probably be counted in the steeping time.
So: 2 vanilla pods scraped in 200ml bourbon for 2 days. Chuck the lot into primary for 12 days, then bottle with another 244ml bourbon and priming sugar.

Notes: Mash at 150°F (65.5°C). Using lactic acid, adjust mash to achieve 5.1–5.3 pH. Dry hop when gravity falls below 1.020, but take caution as nucleation sites may cause a geyser. Notes: Adding Prickly Pear puree direct to Primary. Add fruit just as Fermentation is slowing down, usually 3-5 days after pitching yeast.
I peel the Prickly Pear and puree in a blender sanitized with StarSan. Picked between Oct to Jan, using the bright maroon to purple Prickly Pear that grows all over central Texas. After pureeing, I store the puree in ziplock bags in the freezer.
Love the Blood Orange IPA clone recipe from Ray M with hints from Flying Dog. It has become a go-to for me. Tried to make Prickly Pear recipes before; but, they ended up tasting like Bud with Prickly Pear added. Wanted to start with a known good base. Total experiment. |

romper el grano y hacer un cereal mash:
1k CP+200 gr pale ale (quebrados)
agregar agua hasta que sea consistencia gruesa, llevar a 70° y dejarlo ahi 5 minutos, y llevara a hervor por 30 minutos, revolviendo constantemente. llevar a temperatura del mash y agregarlo.
Hacer un starter de 3 litros y guardar 3 frascos para mas adelante, el resto decantarlo y usarlo.
10 litros a 54, para un rest de 49°
agregar 5 litros hirviendo para llevarlo a 64° |
