Mash at 152°F (67°C) for 60 minutes or until conversion is complete. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.

Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.

Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), drop temp to 14C and add the first dry-hop addition. About 3 days later do a cone dump and add the second dry-hop addition for another 3 days. Cold crash to 1C and then do another cone dump.
Package at 2.6 volumes of CO2 and consume fresh.

-Mash at 150-154 for fuller body, lower for more dry or crisp

-30 min boil

-Whirlpool at 175-185F for 20-30 mins

-May attempt fermenting under pressure to preserve hop aroma" or just use a blow off tube.

DDH schedule:
-High krausen charge at day 2-3. Rack off hops at day 6, closed transfer to keg and drop to 60F.
-Second charge at day 7 at 60F ideally via sous vide magnets.
-Cold crash on day 12-14 and rack to new keg. Unsure how to do this without magnets/hop bags to prevent clogging the dip tube.

*Might be able to use floating dip tube without the filter instead of sous vide magnets for second DH charge in the keg. Would only be a problem because of closed transferring the beer from Bucket to Keg through dip tube.

*Closed transfer - PAY ATTENTION TO HOW MUCH WORT YOU START WITH (Because I forgot last time). Can't go over 5 gal because of keg

Notes: **This is interesting, it is a meaty beer, my wife likes it, but I am not so taken with it. However, I am using the sour culture to ferment leftover beers from other batches that are being poured into the container until it hits 3gallons and a FG of 1.000.

11/29/19-Experimental Beer:

Buckwheat Flour will be cereal mashed prior to the regular mash. Mashed in at 149F, wrapped in a towel to hold a decent temp, will mash for 1hour. 1/2G yeast starter using the leftover wort from the Winter Warmer (approx. 1.068, so 1# dark dme in 1/2G H2O equivalent). There is hibiscus and orange in the honey, so I am eliminating the 2t. of lemon zest from the recipe (whirlpool), the tart flavor should already be there. Someone used all my soy sauce for Thanksgiving, so if I want it (2tsp) I will add it at bottling/kegging. I also added my natural sour culture from our grapes and some live-culture apple cider vinegar just for good measure.

Soy Sauce and lemon zest 2tsp. each, may be added at bottling. Coriander Seed, Red Chili Paste (dry flakes) in Whirlpool.
