Notes: Kjøl ned vørter til 18 grader før pitching av gjær.
Rist godt på gjæringskaret i noen minutter etter at ølet er kjølt ned og overført fra kjelen, for å få mest mulig oksygen inn i ølet før gjæring.
Gjæring på 19 grader i 5 dager, 21 grader i 9 dager.

Notes: Really clear right from the fermentor, nice tasting and very clean, as about as good as you can get without a lager yeast, defiantly a winner beer
now in order to get this right I used the ramping up method, start cold at 59, let it set for 5 days then ramp to 65 go three days then 70 and go three more days without opening then keg and let the beer sit at 34 while carbing slowly at 12....after 5 days on co2 it was Hell of a Kolsch |

Notes: fermenter could not accommodate all the wort when combined with cider so I took a hit on starting gravity. hit 1.081 og, aiming for 1.090+
added 1 lbs honey @ high Krausen, bringing to roughly 1.088.
fermented aggressivley then slowed considerably, fermenting for over a month.
As it has attenuated, the grainy harshness disappeared and the honey and cider became dominant. Still quite sweet; hoping to attenuate to 1.020.
1/27 after nearly 1.5 months in primary, attenuated to 1.020.
Deep orange, floral honey notes, slight tartness. |

I shall let this ferment out for a few days and then add the honey in a secondary, warming the honey before siphoning the partially fermented beer on top of it.
Highish bitterness in case the honey leaves any sweetness.

Notes: Rinse the rice and let dry. Spread the rice in a sauce pan over medium/low heat for 10 minutes, stirring constantly.
Crush all rice and small amount of 6-row separately. Add to 1 gallon water. Rice mixture gets 5-min rest at 158F, then boiled for 30 minutes (should turn gooey). Add to main mash at Sacc. infusion.
Add water to cereal mash as needed if low. |
